Fun Foods

Hey bloggies! I have some exciting (in my mind at least) eats to share with you today! But let us first start with lunch, which wasn’t too exciting but good still because I haven’t had a salad in a while.

I had another 3 course work meal, it seems to always be that way now! First course, my salad, included the following:

  • Arugula
  • Spinach
  • Raw broccoli
  • Green bell pepper
  • Feta cheese
  • Almond Accents
  • Herb flavored vinegar

Second course was some cut up carrots and orange peppers (can you tell the difference?) with Tribe dill hummus.

And then finally, Stonyfield Organic rasberry yogurt with blueberries. First time trying this yogurt, I loved the fruit on the bottom!

I also brought a Clif Mojo bar to work too for a snack but never ended up having time to eat it. I’ve been carrying it around in my bag for a week now waiting for a chance when I’ll need it but it still hasn’t happened yet! I’ve never tried Clif Mojo before. What’s your favorite type of bar?

I returned home after work but was on my own for dinner since I had made my parents bigger versions of my lunch salad this morning. While they ate those and turkey burgers, I came up with the brilliant idea of making a sweet potato quesadilla. I absolutely love sweet potatoes (who doesn’t?) but always eat them the same way, either as baked fries or just microwaved like a potato.

Today I microwaved it until soft and then mashed it with some almond milk and put it on a flat out wrap. Then I added some flax, shredded coconut, and sliced apple. I folded it in half and heated in a pan and then finished off the meal with a blob of Justin’s maple almond butter for dipping.

I had a small salad on the side with blueberries, goat cheese, arugula, craisins, walnuts, and apple cider vinegar.

Now for the funnest food of the day, I made Gena’s Banana Froyo! I had frozen about 2 and a half bananas the other day and actually had to use a blender because my food processor was too small but after 10-15 minutes of blending – scraping – blending, I finally reaches soft serve consistency! I topped my portion off with some unsweetened coconut flakes. It was delicious!

Now I’m off to visit the boyfriend for another movie night (we’ll see how late I’ll make it up til tonight!). I have work again tomorrow at 11 but brought all my stuff with me tonight so I don’t have to go home in the morning. I’m excited for the challenge of finding something to bring for lunch tomorrow at his house :)

    I love the Mojo bar by Clif! I am not sure if they have different flavors of it but I remember it having peanut butter and pretzels.. one of my favorite combos :)
