I’m considering today my official start to summer because I finally got around to making one of Angela’s green monsters! Although mine ended up looking quite appetizing, if I don’t say so myself
It could pass as a strawberry smoothie!

In the mix:
- 2 big handfuls of spinach
- 1/2 medium banana
- 1/2 a beet leftover from yesterday’s salad
- tbsp of flax
- cup of original almond milk
- 5 ice cubes


It was actually really really good! I was nervous about using the beet but I think, with the banana, it sweetened the smoothie perfectly! I’ll definitely be making more of these!
I was quite the snacker today, it was just one of those days. Besides the green monster I had a banana-nutella ‘wich:

I was introduced to nutella when I first started dating the boyfriend. Instead of the staple peanut butter in the cabinet like at my house, his house is always stocked with at least 2 jars of nutella! For those that are unfamiliar with it, it’s a hazelnut spread with skim milk and cocoa.

While I LOVE chocolate and sweets, nutella is actually a bit too sweet for me sometimes! One tablespoon is definitely enough.
And my third snack of the day:

I did eat some meals in between all these snacks! For lunch I found a Tasty Bite multigrain pilaf in the cabinet.

I added some kale and sliced zucchini to up the nutrition. It was pretty good, the pilaf is basically spiced millet with beans.

We have so many tupperware’s full of beans in my refrigerator that tonight’s dinner had to include them. First, I made yellow rice by following the instructions on the packet.

I added about 2 3/4 cups of spinach and some diced green peppers in the last five minutes of cooking. Then I heated up 1/2 cup of refried beans for me and 1/2 a cup of black beans for my parents and put it on top. Finally, I topped it with cheese & salsa.

I definitely love nutella, but I agree it can be too sweet
Your smoothis is rather pretty! maybe it’s the beet that beat out the spinach coloring!
