Good morning, afternoon, or evening, depending when you’re reading this
Thanks to the recent maple syrup purchase, pancakes were able to be made yesterday for breakfast. They’re never the same if I use anything but syrup. I used the new Quaker Oatmeal Pancake Mix. They came out really gritty and thick. After putting Smart Balance and maple syrup on top, they actually reminded me of Cream of Wheat. When I was little we always made it with butter, cream, and brown sugar. That combo makes me cringe nowadays!
I had a veggie sub from Subway for lunch. Boring. I still plan on going to Quiznos instead but this time someone brought it home for me so I couldn’t help myself.
For dinner I decided to pull out a cookbook. Old fashioned, I know. I made the Polenta Casserole from Eat, Drink, & Be Vegan. I unveganized it by using mozzarella and it turned out amazing.
I highly recommend this cookbook! My Mom started Weight Watchers and I’m trying to cook her tasty, healthy, and light meals and this one clocked in at only 6 points a serving (271 calories).
I can’t post the recipe but to give you an idea of it’s mostly made out of:
- polenta
- kidney beans
- tomato sauce
- mozzarella
- lots of spice!
I’ll be making that again. I think even my boyfriend would like it. I’m extremely nervous that when we finally get engaged and move in together, I’ll have to cook separate meals for the two of us since he eats meat and I don’t. I think that this protein packed bean dish is good enough that you don’t notice it’s vegetarian! I need to collect a lot of meals like that.

- Work out
- Walk Zoe (my brother’s puppy)
- Take Mark to the DMV
- Work
I can’t wait to spend time with this little girl!
P.S. I rewatched Lost yesterday and am now content with the premiere. I think the hour of commercials kinda killed it for me Tuesday night. From now on I’m always watching it sans commercials!

That casserole looks amazing! I am so tempted to order the book from Amazon right now (seriously). My mom is on weight watchers too.
I am single, but when I was little I really liked pasta in Heinz tomato soup (!). Now I prefer a real tomato sauce or pesto…hehe.
The casserole looks awesome!! My hubby does eat the same healthy foods that I do when it comes to dinners, but for breakfast and lunch, he makes his own stuff which isn’t the healthiest but not the worst for him either.

Well, I used to (be forced) to eat alot of rice porridges when I was young…now, I can’t get enough of oatmeal!

abe’s a vegetarian and i’m not. i eat veggie at home and eat meat out, aside from cold cuts and canned salmon. seems to work out okay for us, but i know it can be difficult for those men-types!!!
My guy has a healthy appreciation for veggies and hummus (like me), but otherwise we eat pretty differently.

i secretly hope your bf converts to veg once he tastes all the delicious things you prepare and realizes he doesn’t miss meat at all, but even if he doesn’t i think you’ll be fine
