Snow Day Ramblings

Happy Thursday! One of my favorite days because The Office and 30 Rock are on tonight – the only two shows I watch anymore. Until LOST of course. In 5 days. Yay!! You don’t even know how excited I am for that.

Yes, for all you other Lost fanatics, that’s all the dead people on the new poster! They’re totally coming back somehow.

Since theres not too many shows I’m into right now, the boyfriend and I spend a lot of our nights watching the same movies over and over again. I swear I’ve seen the Mummy like 12 times by now. Our ritual is to watch an old movie and then fall asleep within the opening credits. It’s pretty bad, I think we were sleeping by 8:30pm last night.

Good thing because I woke up to SNOW! Which means I had to wake up extra early and clean my car off. I hate snow when you’re not prepared for it, although it does look prettiest in the morning :)

Yesterday I switched up my breakfast a bit. I was feeling tropical (it wasn’t snowing then!).

Mango chunks topped with pineapple cottage cheese and wheat germ.

Afterward I did 35 minutes of cardio on the stationary bike with Bon Appetit. It wasn’t too interesting a read because the cover story was Meat & Potatoes, which is not my thing. I’ll give it another chance next month though! It did have a pretty awesome story on how they make tofu in Japan. I’d really like to try their unAmerican tofu. I’m sure it’s totally different. Anyways, I’ve really been craving tofu since then. Never thought I’d say that!

After the bike I got on the Wii Fit, which excitedly told me I’ve been maintaining my weight (or maybe I was the excited one). Then I did some 3 sets of jackknifes, one minute planks, and torso twists. Since Wii Active doesn’t work on abs, I’ve been using the Wii Fit once a week for them.

After beating the trainer in the plank challenge (she could only do 40 seconds – HA!), I headed over to my brother’s house to walk his dog Zoe while he and his wife are at work. By walk I mean be dragged as she sprinted all over the place. I think I must have gotten 10 more minutes of heart pumping cardio in. Well, I guess I did say I wanted to start running more!

After dropping the puppy off at my house so my Dad could entertain him, I went over to the boyfriends and made both of us lunch – brown rice and a potato-vegetable medley that could be steamed in its bag in the microwave. Really easy to make but not too tasty. It was really bland.

I forgot to take a picture of dinner, but it was wheat spaghetti with broccoli rabe and white beans. Dessert was a small piece a dark chocolate. And then we preceded to go upstairs and fall asleep, as I said before.

It’s a very exciting life I lead, I know! Now I’m going to go read about Obama’s address last night and hope that he said he’ll fix the unemployment crisis and find me a job :)

Morning Chocolate

Good morning… or almost afternoon I suppose. I was off to a slow start this morning and didn’t get up til 10am. I immediately got dressed and hopped on the elliptical for 40 minutes while kind of watching Rachel Ray’s 500th episode. She just irks me for some reason! Maybe I’m just jealous that she has her own cooking show and I don’t? Possibly. What’s your take on Rachel Ray, do you like her?

After doing some ab work, I made an interesting bowl of oats. The boyfriend’s Mom saved me a mint plant from their yard and I wanted to use it this morning so I came up with some Mint Chocolate Oats.

Ingredients included:

  • 1/2 cup Bob’s Red Mill 4 Grain Hot Cereal (or any oatmeal like substance)
  • 1/2 cup soy milk, 1/2 cup water
  • 6 mint leaves
  • Tbsp Cocoa Powder
  • 1/2 small banana
  • Tbsp shredded coconut
  • Tbsp of your fav nut butter

I boiled the water and milk and then added the oats and brought it to a simmer for 10 minutes. Then I added in the chopped mint leaves, the cocoa powder, and the small banana (in very thin slices). I let it cook for a few minutes more, poured it in my bowl, and topped it with shredded coconut and a tbsp of Once Again sunflower seed butter.

Sometimes I’m just craving some morning chocolate and this is the perfect solution!

An end to laziness

Hiya :)

I slept until 10am today which gave me 9 hours of sleep. Way too much! I function much better on 7-7.5 hours, otherwise I feel groggy and still tired when I wake up. How much sleep do you need? So my day got off to quite the slow start. I drove home and had a small breakfast around 10:45 since I knew I’d be eating lunch in 2 hours.

Shredded wheat cereal with 1/2 cup applesauce, 1/2 cup blueberries, and the rest of my oven roasted Almond Accents.

I love applesauce in cereal. It doesn’t make my cereal soggy as quick as a milk does and it gives it a little more flavor. What do you put in cereal besides milk? I also like using greek yogurt and cottage cheese sometimes.

After breakfast I helped my Dad take off the pool cover, finally. It’s already July and we’re just getting the pool open! Stupid rainy weather. But yay for being able to go swimming in a few days!

After that, I did 45 minutes on the stationary bike while reading this week’s Shoprite flyer and then did abs while reading some blogs, simutaneously. After showering, it was already time for lunch!

Since I bought Swiss Chard at Whole Foods the other day I needed a way to use it. I made Swiss Chard with Chickpeas and Couscous from Myrecipes.com. I followed it pretty much exactly except used peanuts since I didn’t have any pine nuts.

I made four servings and think I am going to freeze one of them so I have a little healthy tv dinner for some time in the future.

I’ve noticed a lot of people setting goals lately in the blogworld so I thought I’d set myself one for this week. I’m going to try and put an end to laziness! While I workout 6 days a week, I’m lazy in other aspects. Like when the boyfriend asks me to go get something for him downstairs when we’re up in his room and I complain. I think every little thing counts in leading a healthy lifestyle!

Hope you’re having a good Tuesday, it’s almost over already and then it’s the middle of the week :) The week before a holiday weekend always feels like a short one!
