Into the Woods

Hello :)

Yesterday I was super excited to try this at work:

It boasts so many health benefits, I’d seen people rave about it on their blogs, and it’s so expensive – it has to be good. Unfortunately, it was a disaster. It was absolutely horrible! It tasted like I was drinking a mix between beer and wine – I couldn’t even finish it. I’m sorry to all you Kombucha lovers, it’s not for me! Is there any foods on the blog world that you had high expectations for but ended up failing you?

To be fair, I don’t like carbonation and it is carbonated so maybe that’s why it was so undrinkable. Or maybe I got a bad flavor. I usually like to give things another chance but when I looked at the label and saw this my mind changed.

For best results drink one bottle a day!? It’s just not possible. I think I’ll stick with water.

At work the unthinkable happened. I went to photog my lunch, and my camera broke! I couldn’t take a picture but I had an apple-feta-craisin-walnut salad with a blueberry Oikos on the side. Luckily the boyfriend has an extra camera I can use for now so I was able to continue my blogging duties at dinner :)

Dinner was last minute since I didn’t get home from work til 7:30. I made some quinoa since it’s one of the quickest cooking grains and then sauteed some veggies in a skillet with some premade ginger-sesame sauce that I bought at Shoprite.

I had a girls night with one of my friends last night because the boyfriend went to a Yankees game. It was a lot of fun, I forget how important it is to get in some girl time every once in a while! It’s so hard to pencil time in for work, the boyfriend, family, and friends sometimes.

This morning I woke up refreshed and decided to go on a run. At the last moment turning down my street I decided to go on a trail in the woods behind my house.

When I was younger I used to walk there ALL the time. Oddly enough, now that I’m older, I was actually a little wary of being back there alone. I ran in the woods for maybe 4 minutes and then sprinted outta there. I love the woods but I think I’ll need to find a running buddy before attempting to run in there again! Are you afraid to run certain places alone?

I spent the rest of my 40 minute run on the streets of my neighborhood, which is extremely hilly. I’ll be feeling it tomorrow! Then I finally got in some strength training. I haven’t done any in like 2 weeks since I’ve been working so much (I know, there should be no excuses!).

For breakfast I finished off my box of Barbara’s Shredded Oats with some flax, sliced bananas, and almond milk.

What? No pumpkin you say? I thought I’d give my poor Dad a break. I haven’t finished my can yet so my pumpkin week is not over yet!

Too Far

Has anyone seen the new ad by PETA?

I’m interested to see what everyone thinks of PETA. I think they went too far but honestly, am not surprised. They often do crazy things to get their message out and I think have already made it clear that they don’t really care what the public thinks.

I just don’t see how making fun of overweight people will turn them vegetarian. Just because you become vegetarian, doesn’t mean you’ll lose weight. There’s tons of ways to sidetrack meat while still eating unhealthy. You can live off of junk food and fake meat substitutes if you’d like! Personally, I think the ad is appalling. What do you think?

Taco night last night didn’t go as well as I’d planned. Apparently my Dad doesn’t like Mexican food. Seriously? Who doesn’t like Mexican food!? He had one taco and called it a night, which kind of bummed me out. I always want everyone I’m feeding to enjoy the food! My Mom and I both had 2 tacos though and they were very good. My Mom couldn’t tell the difference between real beef and the Lightlife veggie crumbles!

Later that night at Mark’s, his Mom came home with vanilla ice cream and waffle cones. And guess what? I somehow made it through the night without eating any! Instead, I had a peach with wheat germ.

This morning I slept straight til 9:30am, made it home to my  100 degree house (our AC is broken!) and managed to do a very sweaty 45 minutes on the bike, followed by 15 minutes of arms. Breakfast afterward was a love muffin with raspberry jam and a bowl of cheerios with apple sauce, pecans, sunflower seed butter, and bananas.

For lunch I made my Dad and I Sun-Carrot sandwiches with roasted veggies on the side. He liked my sandwich. Yay!

Today’s my last day off until a weekend of working so it might be a day or two before I post again. I’ll be saying TGIM once Sunday passes!

All-time Favorites

Happy Friday! Unfortnately for me, I get to look forward to a weekend of work. Boo!

I was so caught up in my Dorney park trip yesterday I completely forgot to post Wednesday’s lunch and dinner. Not that they’re anything too special but I like to put everything up in case you guys need a dinner idea or something. That’s one of my favorite parts of reading your blogs – meal and snack inspiration!

For lunch I diced up some onions, eggplant, and tomatoes and sauteed them until soft. I put it in a whole wheat tortilla, sprinkled some mozzarella and italian seasoning on top and warmed it in the skillet until melty. All I needed was some marinara sauce for dipping!

Dinner was a tomato, cucumber, and red onion salad that was mixed with balsamic vinegar. On the side I had the world’s smallest flounder fillet (baked). This is a really tiny plate!

Today the boyfriend and I woke up at 8 and I got a bowl of Barbara’s shredded oats with soy milk and white peaches. Yes, those are peaches! It really confused me at first because as I was cutting them I was wondering if I actually grabbed some sort of fuzzy apple.

I did some blog reading and then convinced the boyfriend to come back in bed and lay under the covers for a few minutes cause I was cold. We ended up falling asleep and not waking up again until noon! I went home and made myself my all-time favorite salad: Strawberry-walnut with feta.

After talking to my Dad for a bit (he told me he made his first green monster!), I got on the stationary bike for 45 minutes and then went up to my room to do about 15 minutes of arms. Since I had such a tiny lunch, it was time for lunch part 2 after my shower.

You might not believe this, but I’m actually out of peanut butter right now! Completely out! I think a trip to the store is in order for today but it gave me an excuse to open my sunflower seed butter. I only like to have 2 jars of nut butter open at a time, one at Mark’s house and one at mine. Do you have any rules for your food?

With my sunflower seed butter open, I got to make my all-time favorite sandwich. Seriously, this is the best sandwich ever!

Sun-Carrot Sandwich

Arnold Sandwich Thin*

1 Tbsp Sunflower Seed butter of choice (I like Once Again)

1 small carrot, sliced into pieces of about a 1/2 inch thickness

1/2 tsp flax seed

1/2 tsp honey

*You can use normal bread but I like using the sandwich thin because it has the perfect surface area for the tbsp of sunflower seed butter.

Directions

While the sandwich thin is toasting, slice carrot into moderately thin pieces. Spread sunflower seed butter on one side of the sandwich thin, place carrots on top, and sprinkle with flax and honey. Top with other half of sandwich thin and enjoy the 3 minutes of bliss you’ll experience while eating it.
