Goodbye for Now

This is it, last post before I’m in ArUbA! We’re (my parents and the boyfriend) leaving at 7am for the airport and should arrive around 3:30pm. Woo hoo!

First things first, food!

Before work, I stopped at the boyfriend’s house to make sure he was packing and couldn’t resist trying an apricot from the fruit basket. I’ve only ever tried them dried. Basically tastes the same!

Lunch at Swarovski today was my last portabella gardenburger on an Arnold sandwich thin, topped with cucumbers and spinach.

On the side I had baby carrots and bell peppers with roasted red pepper hummus.

This was my first time trying Sabra hummus. I was impressed!

So I totally forgot to bring a plate and had to microwave my burger on a piece of cardboard and eat the veggies out of the plastic. Please don’t mind the not-pretty setup! I was roughin’ it.

Later in the day I tried my first Gnu bar, orange cranberry. The bar’s texture was great and perfectly chewy but the orange flavor was just too overwhelming for my taste. I’d definitely buy a different flavor of the bar though, it had potential!

Dinner was whatever I could use up in the fridge before we depart.

Roasted peppers, onions, and spinach on Arnold sandwich thin with hummus. It was freezing in my house so I also had a bowl of vegetable soup and a large mug of tea on the side.Nothing fancy, just some progresso I found in the cabinet.

So proud of myself for stopping at half. I’m a sucker for brownies! They never taste as good as when I make them myself from the brownie mix box though.

Now for some vacation talk..

Since my knee has been hurting me quite a bit for the past week, I’m going to try to make this vacation week a rest week from intense workouts. I think this is a good idea since I plan on starting my triathlon training when I return. Hopefully a week off is just what my body needs! Anyways, I’m sure I’ll be getting more exercise than usual on the island by just walking, swimming, and biking daily, unlike my life in the suburbs where you can’t get anywhere without a car.

I don’t know if I mentioned this before, but I’m a pretty hardcore calorie counter right now but have been trying to stop. It would be very hard to count in Aruba since I’ll be mostly eating out and have no access to a computer. It’s going to be tough but I’m going to attempt to just eat normally this week without thinking about calories. Wish me luck!

I’m going away from today until next Saturday. I hope to be able to get a few posts in here or there as long as there’s an internet cafe. If not, I’ll have a lot to show you guys when I get back! Have a great week, I look forward to reading about it on your blogs when I return :) I’ll miss you!

Kabocha!

Happy Friday! The sun is out here and its going to be in the 80s! Beautiful. I’ll be at work til 9 but I’ll look on the bright side, at least I work in an outdoor outlet mall and can stare outside all day :)

This morning’s breakfast was in sync with the weather.

My favorite peanut butter in the entire world! Peanut butter & Company’s Cinnamon Raisin Swirl. Since I was craving the peanut butter cinnamony goodness that Naturally Nutty’s didn’t supply.

Like seriously, if you haven’t tried this peanut butter, GO OUT AND BUY IT! It kind of has a gritty texture from all the delicious cinnamon added in and includes real raisins!

After breakfast I jumped on the stationary bike for 40 minutes. My leg’s been hurting me a little for the past few days so I made sure to do some good stretching afterward (I may or may not have been skipping stretching all together lately…) Then I did my 15 minute arm workout before starting on lunch.

I had to have an early lunch today and made my new food for the week for Chocolate Covered Katie’s New Food Challenge :) After seeing Kabocha all over blogland, I scoped one out last week at an Asian market (new food shopping experience too!). After debating how to make it, I went with a tried and true recipe, Kath’s Cranberry Walnut Stuffed Squash. Instead of brown rice I used barley, instead of walnuts I used peanuts, and instead of Acorn Squash I used Kabocha. Turned out great!

I probably won’t have time to post tonight since I’m working until past 9 and then may go out. I’m taking dinner to work, which is pretty much a repeat of Wednesday’s lunch. Have a great Friday night!!

Busting Out

Day 2 of work done and now I’m off til Friday. Yay! I need to get some comfy work shoes, I have yet to find a cute pair of comfy shoes that last me through 8 hour shifts on my feet. I may have to resort to some not-so-cute shoes soon because my poor feet can’t take the pain anymore!

Lunch was at 2:45pm, so it was an improvement over yesterday, especially because of that awesome bowl of oats this morning. I wasn’t even that hungry yet! And omg, that seed sprouter was the best investment ever!

I piled half of the zesty mix sprouts on top of a Gardenburger Portabella burger and left the rest in the fridge for my Dad to try.

To complete the burger, I spread some Fox Meadow eggplant and olive hummus on an Arnold Multigrain sandwich thin. I’ve been a big fan of Gardenburger products for a while now but after moving back to NY, they’re too expensive to buy here unless they’re on sale (which they were this week :) ).

The portabella is my favorite (with black bean chipotle in close second). According to their website, it’s a savory whole grain burger made from fine portabella mushrooms with mozzarella cheese, wild rice, fresh onions and rolled oats. Basically, in my opinion, the perfect veggie burger! I brought the frozen patty to work and microwaved it and it was just as good as when I usually make it on the George Foreman.

On the side I had a huge serving of the juiciest strawberries i’ve had in months (I love berry season!) and a 1/2 cup of cottage cheese with flax.

It was a great lunch and kept me full until I got out at 7pm.

I even found one of my Sigg water bottles that never got unpacked until now. I noticed I’ve hardly been drinking any water while back at home when I always used to make sure to get my 8 cups a day at school so I vowed to start carrying around a reusable water bottle with me everywhere I go!

I went straight to the boyfriend’s house after work and he begged me to make him dinner. Gosh I feel like I’m married already! Work 8 long hours and then have to come home and cook dinner for the two of us. It’s a good thing I love cooking, I didn’t mind at all!

I put some brown rice on the stove while I defrosted chicken for him and shrimp for me. While the rice was cooking I stirfried his chicken in oil & splattered it with teriyaki sauce (my shrimp was precooked so I just ran water over it to defrost). When it was basically done, I stirfried this entire bag of green bean stir-fry vegetables from Birds Eye with 1/4 cup of Kikkoman Teriyaki sauce in a separate pan.

The vegetable stir fry included whole green beans, broccoli, pasta (very little!), carrots, water chestnuts, and red peppers. I love a good stir-fry, probably one of my favorite dinners :)

The answer to today’s trivia question is…

False! I forgot the answer card at home but according to Dr. Gourmet, Sherbet (also known as Sherbert) contains milk or fat, making it creamier and more similar to ice cream than sorbet, which is technically an ice that can be made from any ingredient (from chocolate to champagne, although fruit is most popular). What’s you favorite flavor or Sherbert or Sorbet? Mine is orange all the way. I love creamsicles!

The the boyfriend and I have a fun day planned for tomorrow, part of which includes the movies. Did anyone see Angels & Demons? I want to see it but he doesn’t since he came with me to the Da Vinci Code when that came out and it was horrible. I can probably convince him if I really want to though so I need some input! Otherwise we’re gunna go see Monsters vs. Aliens in 3D, which also sounds pretty cool.

Time to go get caught up on all my blog reading from today. I miss having all the time in the world to browse the Internet. I give all bloggers with full-time jobs major props for obviously managing their time extremely well!
