Happy Monday!

Guess what finally returned this Friday after many weeks of misses? Pizza night!! We started off the new streak well – one whole wheat veggie pizza and one shrimp white pizza.

As usual, the wheat pizza came out the winner. Personally, I always think whole wheat products taste better than their nutrition lacking  white counterparts.

I worked down in the city Saturday and had planned on checking out a new gym but, to my disappointment, pretty much all the gyms in my area are closed on weekends! Luckily I walked into a NYSC to find that they were at least open late on Saturdays. The sales guy left me a message saying he’ll give me a 3 day pass so I hope I can try it out this week!

Sunday I was in the kitchen all day. Well first I started the day with a run and a quick stop at the grocery store. Can you spot anything peculiar in this section?

News Flash: Barney butter has made it to stores in the North East!

I didn’t buy that tiny little jar for 5.99 but it’s good to know it’s there. What I did buy were all the ingredients to make homemade manicotti!

We were celebrating my Pop’s birthday at dinner. Usually we buy manicotti from an Italian store in the Bronx but since no one made it down there, I decided to try my hand at them. The recipe called for spooning the ricotta mixture into the pasta shells but instead I put the mixture in a ziploc and cut a hole in the corner so I could squeeze it out like I was stuffing cannoli. Fun!

Not to brag or anything but I heard they came out better than the ones store bought :)

Second, I baked a cake, carrot to be exact. I’m calling it tropical carrot cake because it included pineapple and coconut. I know carrot cake supposedly always has pineapple in it but I’ve never had one with it before. I took it to another level and even whipped up my own cream cheese frosting. Look how smooth!

Although putting the icing on the cake isn’t my strong point.

All that work in the kitchen paid off when dinner was served.

Hot as Ice

Good Morning!

Today’s supposed to be one of the hottest days of the summer here in NY. While I’d like to be lounging out by the pool all day, I’ll be inside helping sweaty foreigners all day. On the upside, I’ll be in the AC. I really really hate the heat, like can’t stand it! My hair gets frizzy, I get all sweaty, and I can’t sleep at night. I’d much rather be cold and grab some extra blankets or pile on the layers under my clothes. If you can’t tell, I’m getting a bit of writer’s block so ranting about the weather seemed like a good idea. What would you rather be, hot or cold?

I do have a confession to make. Last night the boyfriend’s Mom made baked ziti. I still have a small fear of eating things when I don’t know exactly what went in to them (she likes to put tons of olive oil in everything – from broccoli to pasta sauce) so I opted out of the cheesy mess and made myself a portobello mushroom burger instead.

I had it topped with spinach and bottomed with a 1/4 of an avocado on an English muffin. It was delicious but it was not filling enough – an hour later I was scrounging around looking for something else. Mark and I were watching the Yankees game, which was sponsored by Taco Bell… you can see where this is leading.

I don’t ever eat fast food anymore but Taco Bell was always my favorite in the past. I only like one thing on the menu though so that’s a good thing. I got a bean burrito. It was good but I just kept thinking how easy it would have been to make my own bean burrito. It’s just refried beans, cheese, onions, and some taco seasoning! So it’s actually good I went there. Now if I ever get the craving I’ll just make my own :)

Later that night I had some unpictured sour cream and onion Annie’s bunnies, compliments of my coworker whose allergic to corn and ended up breaking out when eating them. I feel bad for her allergy but can’t say I don’t love getting all the free organic/natural foods from her! I also had a banana with Barney Butter and cinnamon. Bored of my bananas yet?

This morning I made the best bowl of oats I’ve had in a while.

In the bowl:

  • 1/4 cup steel cut oats
  • 1/2 cup almond milk, 1/2 cup water
  • 1/4 cup wheat bran
  • 1/2 banana, sliced thinly and whipped in towards the end
  • blueberries
  • chia seeds
  • pecans
  • peanut butter

This will keep me full for a long time, it was almost hard to finish. Seriously, if you need to eat a hearty breakfast, add in some wheat bran!

Productivity

Happy Sunday! Sunday’s probably my favorite day – I always seem to get things done.

Things accomplished by 2pm:

  • Used up the rest of my zucchini by baking zucchini muffins
  • 45 minutes on stationary bike and 15 minutes of ab and leg work (side planks, torso twists, lunges, squats)
  • Went through and emptied bag from moving home after college (only one more box left!)
  • Cleaned room
  • Went through clothes and am donating some that no longer fit or that I just don’t wear anymore
  • Went to grocery store for a restock on bananas

While I was at the grocery store I found Barbara’s shredded oats on sale. You don’t know for how long I’ve been wanting Quaker oatmeal squares but wouldn’t allow myself to spend 4 dollars on it. I swear, since like April!

These look the same (probably better actually) and were on sale 2 for 5!! I think I may be taking a trip back to Stop & Shop later in the week :)

Now I’m over at the boyfriend’s house getting ready for band practice (so getting things done ends here). We took the day off yesterday.

As I said, I made zucchini muffins this morning using Fat Free Vegan’s amazing recipe again.

They are SO good and only 100 calories – just like vitamuffins  but more affordable :) I made some banana porridge (mashed banana microwaved with 1/8 cup almond milk and some cinnamon) and topped it with a crumbled muffin and peanut butter.

I made big salads for me and the parents for lunch.

In the bowl:

  • romaine lettuce
  • tomatoes
  • carrots
  • zucchini
  • sweet pepper from the garden
  • raw broccoli florets
  • oven roasted almond accents
  • grated asiago cheese
  • herb flavored vinegar

Although I haven’t had dinner yet, I have yesterday’s to share. I dipped into my emergency food stash in my drawer at Mark’s and made Near East garlic and pecan rice.
