Manic Monday

I think I woke up on the wrong side of the bed today. I spent the early morning driving to 3 different places in order to get my car inspected (it expired in March and I just noticed on Saturday!) – one place had no stickers left, one couldn’t do it right away, and luckily the third did it for me. Ugh, I just know it’s gunna be one of those days!

When I got home I didn’t feel like waiting for oats to cook and wanted to use some of the angel food cake leftover from the trifle so I just made a random bowl of whatever I had around.

In the mix:

  • 1/2 cup pineapple cottage cheese
  • 4 strawberries
  • blueberries
  • 1/2 banana
  • 1/2 tbsp flax
  • tbsp peanuts
  • tsp unsweetened coconut
  • 1/16th of the angel food cake

You can never go wrong with a bowl full of fruit & cake!

And as for my late night snack last night, I kept it light with a microwaved mashed up banana, cinnamon, and my last tbsp of pb Loco caramel chunk peanut butter.

Yay, that means it’s time to open a new jar!

Today’s my first day back at work and it’s an all day shift, 11-7. I always hated those hours! Luckily today is my rest day from working out because it would have been hard to find the time for it.

We’re also celebrating my Pop’s 75th birthday when I get home tonight and thoughts of the ice cream cake waiting in the freezer will be helping me through the day :)

Spring Cleaning

It’s been 3 weeks since I moved home and my room still looks like this:

sdc11051At least I took most of my clothes out of their bags!

So today my Mom and I are having a cleaning day. I’m not leaving the house until I’m completely unpacked! We’ll see how long this takes…

Mom brought home some pineapple cottage cheese last night so I was really feeling it for breakfast. While my Dad made himself French toast, I perused my cabinets for 20 minutes (literally) deciding on what to eat with it. It seriously takes me 8 years to make decisions – he was on his 4th piece by the time I chose breakfast!

On the side I had a cup of hazelnut milk. I don’t usually drink non-dairy milks straight up but the hazelnut one smelled so good!

It was ok but I think I’ll stick with using it for cooking.

Since I don’t post late enough to include my late night snack, I’m going to start putting it in my breakfast post so I’ll make healthier choices.

The boyfriend’s Mom grew up in Brazil so there’s always plantains around but I never eat because she always fries them. Last night I tried roasting them with cooking spray and cinnamon instead.

I love plantains! I had them with the pb loco caramel chunk pb and the caramel chunks got all chewy since they were on the hot plantains. Perfect.

Ok, well I better get a move on my room. I do plan on getting a real workout in today too.

Stayin’ alive

I noticed recently that I’ve been not eating enough during the day and then having to eat tons of food at night. So my goal this week is to eat more daytime snacks!

On my way to pick up my cousin Rosemarie I snacked on this:

lp_821x343First time trying this flavor. It’s a keeper! I can’t believe the only ingredients in it are dates, peanuts and salt. Larabars continue to amaze me.

Her hair appt. was actually at a spa and there wasn’t really room for me to sit with her so I parked myself on the couch in the lobby and wrote a cover letter for a job I REALLY want and applied when I got home. I’m crossing my fingers I get a response next week!

Her hair looked so good. She’s only a sophomore so it’s not her prom and she didn’t want to stand out. She got braids in the front, Jessica Alba style.

After dropping her off back at home, I made a quick stop at the Asian grocery store in my town to pick up my food for next week’s new food challenge. I like to plan ahead!

Then I headed over to see the boyfriend. When I got there he was already eating lunch so I was on my own. It was already 3pm and I was hungry so I made myself a bowl of Kashi U with soymilk, 1/4 of a cut up apple, and a tbsp of pb loco caramel chunk pb.

I’m so over this peanut butter. All the caramel chunks have turned into like rocks! It’s so hard to eat them. I don’t like hard things in my peanut butter unless it’s a piece of a peanut. But I’m never one to waste anything so I have to finish off the jar!

Before dinner I finished off the rest of my Annie’s honey bunny grahams. And I’m guilty of forgetting to photograph it! So here’s the empty box:

I made a recipe out of my Betty Crocker Whole Grains cookbook for dinner. I think it was called Asian Millet Stir Fry. It was good! I subbed whatever vegetables I had for the ones called for and that turned out to be: green bell pepper, carrots, and zucchini. I also subbed tofu for the chicken.

The groundhog didn’t get to all my sunflower seeds – some are still alive! Looks like I’m back in the Sunflower Experiment :)
