If you haven’t heard of the wonderful Operation Beautiful that Caitlin started on Healthy Tipping Point, check it out! I was totally inspired by the movement and posted my first note in the public bathroom at the outlet mall that I work at today.

Lunch was a salad that I made yesterday to bring to work today. Unfortunately, I think salads are best made the day you’re going to eat them! The apples were all brown and unappetizing and my salad dressing spilled in my bag so I had to go dressing-less to boot.

It’s okay, my side of nectarine slices, flax, and cottage cheese made up for it!

Around 6 I had a Carrot Cake Clif bar to hold me over til dinner. Oh my god, these are so good! It literally tasted just like carrot cake! What’s your ultimate energy bar flavor?

For dinner I had a mini pizza on a Flat Out flatbread.

I picked these up at Wal-mart the other day because I was impressed with their nutrition stats. Each 100 calorie Multi-grain with flax flatbread is made with whole wheat, has 8 grams of fiber, and 9 grams of protein! I think they may become my new obsession

I made a roasted veggie pizza with eggplant, green peppers, kalamata olives, mozzarella, feta, tomato sauce, and mushrooms.

Dinner was followed with, as usual, dessert
My Dad went food shopping today and I couldn’t resist one of these ice cream sandwiches that he bought for my Mom.
