Happy hump day night – the week’s nearing a close! In the retail world, the holiday weekend actually starts tomorrow
Since I woke up so early and ate such an early breakfast, I decided to have a small second breakfast right before leaving for work.

Whole wheat English muffin with Justin’s maple almond butter.
I didn’t have much on hand today at home to make a good packed lunch so I brought in a frozen dinner – Lean Cuisine Butternut Squash Ravioli, which is described as butternut squash ravioli in a creamy sauce with walnuts, snap peas, and carrots.

It was very tasty, although I had no idea there were even walnuts in it until after I was finished and I read the packaging.If I were grading it just based on taste I’d give it an 8 out of 10!


The vegetables were crunchy, the sauce delicious, and the butternut squash ravioli tasted just like I’d hoped.

There is nutrition to take into account though.
I liked that it contains:
- 2 whole servings of vegetables
- 13 grams of protein
- 6 grams of fiber
- Easy to read ingredient list
What I didn’t like was:
- the 10g of sugar
- 35mg of cholesterol
- and 660 mg of sodium
After work, I went over to the boyfriend’s house and discovered that his Mom went food shopping finally. Yay! After checking out all the new goods (Once Again sunflower seed butter, chocolate soynut butter, Bob’s Red Mill Hot Cereal, Organic 10 Grain Bread mix, and jarred portobello mushrooms were the highlights) I started on a dinner.
I had 3 vegan falafel left from the package she had bought me last shopping trip so I came up with Falafel-Yogurt Salad.

Ingredients:
- 3 pre-made falafel
- 1/2 a cucumber
- 1/2 a zucchini
- 1/2 cup broccoli
- 1/2 cup plain yogurt
- dill seasoning
- juice from half a lemon
Directions:
- Cut up veggies in bite sized pieces. Place all, except for cucumber, in bowl with small amount of water and microwave for 3-3.5 minutes. Rinse with ice cold water and drain.
- In separate bowl, combine yogurt, dill, and lemon juice.
- Mix everything together.


It was easy and very good!
Some dessert was in order afterward:

Oliver, our maltese puppy, just threw up and is all shakey and sick looking so I have to comfort him. Poor thing! I feel so bad when animals are sick, he can’t tell me what ails him!
