Definition: Easily excited. That’s me! As you’ll see from all the random things that excite me in this post.
First off, Happy Friday! I can finally say that now because I have a job! Actually mine has weekend hours but for this week it doesn’t so yay! I made it 3 straight days with my commute
Yeah, I need to start out slow to work up to 5 days a week.
The only thing I’m hating is that I haven’t had time to exercise and my race is coming up on Sunday. I was okay with it (I am at least walking almost an hour a day) until my top search for my blog showed up as: “how tough is north face bear mountain challenge?”
This tough:
I’m basically running up the mountain and then back down. Am I nervous? Yes. Excited? Yes! I got my parents to come cheer me on which I’m so happy about. I’ve been solo for all my past races.
Yesterday’s breakfast was a fried egg on a whole wheat roll, with cheddar.
Good thing I had some protein for breks because I didn’t get to eat lunch til 4pm! That’s 8 hours of no food and I was taking notes in a meeting, so my brain needed the fuel! I headed straight up to the cafeteria after and was blessed with riding the elevator up with the gentleman restocking the food. Yay for fresh free food!
I had white fish over rice with half a plate filled with broccoli, carrots, and cauliflower. No picture though
I think from now on though I’m going to go with Ellie’s suggestion of just telling people about my food blog. I think it’s pretty cool. And if they don’t think so, well, then I don’t really care!
I had some time to kill before work so I had called my Dad and heard about all the fresh produce he bought while food shopping. When I got home at 9 last night, I was still so excited about all the fresh veggies hiding in my fridge I used my remaining energy to cook up a healthy dinner.
I stir fried some mushrooms, broccoli, and tomatoes in a little walnut oil and served it over leftover polenta mush. I didn’t add any spices or anything. It was just fresh, pure vegetables and it was delicious.
In Defense of Food got me excited about cooking and eating whole foods again. I just started a new book, “French Women For All Seasons,” by Mireille Guiliano, which also raves about eating real foods and taking time to cook. So, you might hopefully see more cooked meals on the blog. I used to make a new recipe every night and in the past year I’ve gotten a bit lazy. Here’s to getting excited again about cooking, real food, and escaping the Western diet!
