Happy Wednesday!

This week seems to be dragggging on. You know it’s bad when Monday felt like a Thursday! Anyways, thoughts of an upcoming week off is helping a bit. I’m hoping to make a trip to Rhode Island. The problem I’m having is I don’t know where to go because there are so many cool places there for such a small state! Anyone ever been?

Right now I’m hanging on to my last mini vacay to Lake George (ok, I’m a bit travel obsessed at the moment) last month. Lake George is a big lake in upstate NY – 32 miles long to be exact. I went there once when I was little but all I have is a picture of me in swimmies and a tarzan bathing suit. I would scan it in actually but that’d be embarrassing.

Highlight of our trip? Dinner of course! We went on a dinner cruise on the Lac Du Saint Sacrement.

It was a buffet dinner. What was weird though was that you ate before the boat even started moving. I’d rather have eaten while it’s moving but I don’t know, maybe that’s just me. As long as the food was good I couldn’t really complain!

There were rosemary potatoes, pasta with feta/olives, bread, string beans, and fish. After the cruise we walked along the lake and practiced some poses.

And, since you might have spotted my shopping bag, we of course went shopping! Little towns always have the cutest boutiques. I kept with my ‘buy dishware on vacation’ theme that I have going on and bought a Life Is Good mug.

“Do what you like. Like what you do.” It’s a motto to live by! I made sure to follow it by not passing up an ice cream offer later on.

The Worst Allergy

So my cooking laziness continued into yesterday. Lunch was to be eaten 12 minutes before I had to leave for work so I had no choice but to go for leftovers. Luckily my parents had brought home some food last weekend, I was treated to potato-cauliflower patties and spinach soup, both made by my Grandma. I don’t see her too often so a home cooked meal by Grandma is a treat!

I had three patties and a bowl of the soup.

I had dinner at my friend Cassandra’s house. She’s one of my only friends that knows about the blog and loves good food too. She also eats ultra healthy since she’s allergic to corn. Check out some of the ingredients she can’t eat:

  • absorbic acid
  • xantham gum
  • salt
  • natural flavors
  • baking powder
  • maize
  • dextrose
  • maltodextrin
  • maltose
  • confectioner’s sugar
  • vanilla extract
  • sucrose

I made her a food basket for Christmas from Whole Foods and it literally took me 2 hours to get like 6 things because you have to read every ingredient. It’s really crazy how many things corn is in. I mean, she can’t even have regular salt, only sea salt! Anyways, I totally think she should start a blog too :)

One of my other friends and I say that we’re going to go on a Cassandra diet. Eliminating corn from the diet really prevents you from eating most processed food. One week soon I’m going to test it out!

Back to dinner: I assisted her (if lazily stirring the mushrooms counts) while making a dinner last night of potatoes, onions, mushrooms, and tofu. I don’t know what seasonings she used but it was amazing. I even went back for seconds.

Afterward we sat around and talked while eating dessert, a pint of Purely Decadent Chocolate Obsession. I’m more of a vanilla person and don’t usually like chocolate ice cream but omg. We both agreed that this stuff tastes just like a chocolate Italian ice!

Ok well I have to go see what’s wrong with my breakfast. The 5 minute wheatena that I’m making has been taking 25 minutes. I better check on it.. Have a good day!

Give me all you’ve got

Hi all!

I just got home from Nana & Pop’s. Before I went, I had a Yogurt Honey Peanut Balance bar to hold me over til dinner.

This one was 10 times better than the chocolate mint cookie one I had yesterday. It really reminded me of a peanut butter cookie!

When I got to my grandparent’s house, they had the table all set up and ready for dinner. How cute is it that their dinner plates were instructions on how to eat a lobster?

My grandfather was so cute, he attempted new recipes in order to make me healthy food! And he knows me so well, he tried to make not one, but two whole grain dishes! Unfortunately the barley dish didn’t end up finishing on time but the brown rice and mushroom dish he made was phenomenal!

He also made grilled flounder, which I squirted with some lemon juice…

and corn on the cob (which I promptly sliced off the cob after taking the picture to avoid the messiness that comes with eating it straight up).

For dessert I had fresh blackberries and real whipped cream.

I used to be obsessed with cool whip until the day I looked at the ingredient list and it was just a huge list of chemicals. Whipped cream tastes better and at least is made out of real stuff! Then I had a few of these:

I also ended up having this small bowl of Friendly’s maple walnut ice cream mainly because I absolutely love maple syrup and walnuts. It did not disappoint!

Speaking of maple, on to the goodies! I forgot to take pictures of what they got me (my Dad brought it home for me, I’m currently blogging from the boyfriend’s) but it included:

  • Peanut butter & co Mighty Maple and Cinnamon Raisin Swirl
  • Lundbergs Butternut Squash Risotto
  • A new pocketbook (a bronze Kathy bag)
  • A George Foreman
  • A cookbook
  • Cherries, a green pepper, and green onions

Ok so yeah my grandparents let me raid their food pantry and take whatever I want when I come visit. I seriously felt like I was robbing them but they offer everything and won’t let me say no! They’re the best – I can’t wait to get grillin :)
