A Time Consuming Meal

Good day blogland!

I meant to wake up early to post but after consuming a glass of wine last night (yeah, I’m pretty much a lightweight – I only drink at weddings and holidays!) I promptly passed out at 10pm and didn’t wake up til 10am this morning. Oh well, good thing I have a day of doing nothing but cleaning planned!

I’m currently eating breakfast right now, something quick so I could be hungry for lunch at a normal hour. I have an affinity for putting applesauce in my cereal instead of milk. This came about after I would open up a whole jar of applesauce in order to replace one tablespoon of oil in a recipe with it. Then I’d have a whole jar waiting to go bad! I never mix cereals (I like one taste at a time!) but I received this sample box of total in the mail yesterday:

They don’t give you enough for a bowl so I added in some Kashi honey puffs. I really liked the total. Very blueberry-ey. Here it is after mixing has occurred:

Ok, backtracking to yesterday. I worked from 10-3 with no break in between. Luckily little Lara came to the rescue and I consumed her on the sly around 1.

When I got home I was pretty hungy. I made an awesome giant salad.

In the bowl went:

  • artichoke hearts
  • chickpeas
  • peppers
  • parmesan cheese
  • broccoli raab

I slathered on a new dressing my Dad had brought home. It was delish!

The Yankees playoff game was on at 4pm so I sat down and watched it with Mark and one of his friends. It turned out to be a very long game so I went upstairs at one point expecting to throw together a quick dinner. Then I noticed this cookbook sitting on the table which one of my friends had lent me.

I flipped through it and saw a Bell Pepper Risotto recipe. I currently have a MILLION bell peppers from my garden so I just had to make it. It was my first time making risotto and I didn’t realize how time consuming it was! I was upstairs cooking for at least an hour and I really had my doubts about whether the rice was going to soften enough in time. But I succeeded and made my very first risotto dish :) , although box mixes basically come out the same in a much shorter amount of time!

The cookbook also gives wine pairing ideas which is why I decided to go with a glass. At least I only have 12 more peppers to use up! The idea of letting food go bad stresses me out.

I haven’t been making enough time to exercise daily this past week and I’m actually surprised at how noticeable this is. At first I had TONS of energy. I was running around the house, kickboxing my boyfriend (he loved that..), and jumping on the bed. Yesterday was the complete opposite. I felt so tired – even though I got my normal amount of sleep – and actually quite depressed, which is completely out of character for me. I’ve heard before that exercise improves your mood and it’s definitely true! When you exercise, your brain releases endorphins, adrenaline, serotonin, and dopamine, which all work together to make you feel good. So can you guess what’s on my plan for today?

Yesterday the hunger pangs hit before it was time for lunch so I snuck into the backroom for a snacky. My Mom bought me a box of mini larabars but I had yet to open them. Look how cute!

I love all of the pie flavors.

When lunchtime finally came, leftovers were on the menu. But at least they weren’t my leftovers (my parents) so it was like eating a new meal!

When I arrived home from work, my Mom had made dinner once again. We ate a rare family dinner at the table instead of on our counter like usual. She made brown rice topped with shrimp in a lemon butter sauce with a side of broccoli raab and chickpeas.

The rice and shrimp was actually pretty horrible. WAY too much lemon! I tried to eat a little bit because she spent so long cooking but mostly filled up on chickpeas and broccoli.

I chose my dessert wisely for the freak snowy day we were having.. Hot chocolate!

Hey there.

Quick Note

Sorry for my absence but my cat disappeared yesterday and I went out searching for him after work. He’s indoor/outdoor, which basically means we let him do whatever he wants. If he wants to go out he can, if he wants to stay inside he can. He went out Sunday and hasn’t come home since, which is very unusual, since he always comes home at night. There has been times in the past where he’s wandered into someone’s garage and gotten locked in so I have my fingers crossed. He’s a tough cookie (he’s been arrested bu the Police, seriously, but I’ll save that story for another day) so I’m being an optimist for now! I’m worried though… :(

Food

Lunch yesterday was eaten while at work so sorry again for a repeat of the Portabella Gardenburger.

They sure are good though! I also continued with my newly found salad love and had one on the side with peppers, olives, celery, and cucumbers.

I made it to work early since I thought it’d be much busier than it actually was (I guess the recession is taking its toll!) and left way early in case of traffic. With my extra time I decided to stop at the Williams Sonoma outlet. I picked up a new placemat at 70% off! I think my manager thought me a little crazy when I whipped out my new placemat on break and started taking pictures.

I also had a Fiber One bar with lunch. It doesn’t compare to my recent Luna/Lara bar obsession but I will say that it helped keep me full for a good long time with it’s 9 grams of fiber.

After I got off work at 7pm and finished my failed attempt at locating my cat, I made dinner. I had put tofu in a ziplock in the fridge with this marinade yesterday morning:

I baked it at 350 basically just until it was hot since I was pretty hungry. To be truthful, it wasn’t too good. I like my tofu frozen first since the texture gets much better that way, in my opinion. This was all jiggly.

On the side I had yellow rice that my parents made earlier and some broccoli from the freezer. Next time I’m making sure to buy broccoli florets only. The whole bag was basically stems – I hate that!

Dessert was an Apple Pie Larabar. I found this at Walmart on Sunday and totally wish I bought more now. Larabars seem to get better with each new flavor I try! I loved the Apple Pie. It might even beat out the Cherry Pie flavor I raved about.

This morning’s breakfast was a Dutch Baby. I felt like getting a little creative in the kitchen since cooking helps keep my mind off other things (like missing kitties). Do you find cooking to be a stress reliever?

I used a recipe found here from Recipezaar (love this site) and made a few changes, such as substituting half the butter with applesauce and using whole wheat flour instead of all purpose.

This morning I spent a good long time on the stationary bike. Yesterday’s rest day was just want my body needed and I felt great and refreshed today. I could have stayed on much longer if I didn’t have to get ready for work. Afterward I fit in a quick arm workout. The stats:
