Good day blogland!
I meant to wake up early to post but after consuming a glass of wine last night (yeah, I’m pretty much a lightweight – I only drink at weddings and holidays!) I promptly passed out at 10pm and didn’t wake up til 10am this morning. Oh well, good thing I have a day of doing nothing but cleaning planned!
I’m currently eating breakfast right now, something quick so I could be hungry for lunch at a normal hour. I have an affinity for putting applesauce in my cereal instead of milk. This came about after I would open up a whole jar of applesauce in order to replace one tablespoon of oil in a recipe with it. Then I’d have a whole jar waiting to go bad! I never mix cereals (I like one taste at a time!) but I received this sample box of total in the mail yesterday:

They don’t give you enough for a bowl so I added in some Kashi honey puffs. I really liked the total. Very blueberry-ey. Here it is after mixing has occurred:

Ok, backtracking to yesterday. I worked from 10-3 with no break in between. Luckily little Lara came to the rescue and I consumed her on the sly around 1.

When I got home I was pretty hungy. I made an awesome giant salad.


In the bowl went:
- artichoke hearts
- chickpeas
- peppers
- parmesan cheese
- broccoli raab
I slathered on a new dressing my Dad had brought home. It was delish!


The Yankees playoff game was on at 4pm so I sat down and watched it with Mark and one of his friends. It turned out to be a very long game so I went upstairs at one point expecting to throw together a quick dinner. Then I noticed this cookbook sitting on the table which one of my friends had lent me.

I flipped through it and saw a Bell Pepper Risotto recipe. I currently have a MILLION bell peppers from my garden so I just had to make it. It was my first time making risotto and I didn’t realize how time consuming it was! I was upstairs cooking for at least an hour and I really had my doubts about whether the rice was going to soften enough in time. But I succeeded and made my very first risotto dish
, although box mixes basically come out the same in a much shorter amount of time!



The cookbook also gives wine pairing ideas which is why I decided to go with a glass. At least I only have 12 more peppers to use up! The idea of letting food go bad stresses me out.

Now it’s time to clean the house. Making risotto sure made a mess in the kitchen
