Comfort Foods

Figures I rave about how much I love September and then it goes and gets me sick! I don’t know if it was the change in the weather or just germs from the outside world, but I’m officially sick :( Stuffy nose, achy body, the whole nine yards.

Yesterday morning I did end up going biking on the trail with Dad because at that point I just had the sniffles. It was gorgeous with perfect biking weather. We did around 8 miles in 45 minutes. It goes through like 4 towns, we went from one town to another. One day I want to do the entire thing! I think it’s only like 16 miles so definitely doable.

After the bike ride yesterday went downhill. My entire body ached! I took it easy the rest of the day and am continuing to today. I’ve also been indulging in lots of yummy comfort food!

Yesterday I made hot cereal with vanilla soy milk, honey, wheat germ, and Naturally Nutty White Chocolate Cherry almond butter for breakfast.

Lunch was a salmon burger on an Arnold sandwich thin, topped with sauteed red onions, mozzarella cheese, and mustard. On the side I had a sweet potato and hummus.

For dinner I made the ultimate comfort food: pasta! I made the recipe from my Williams Sonoma Eating By Color cookbook called Kasha with Walnuts and Pasta. It basically consisted of toasted buckwheat groats, bow tie pasta, onions,  and walnuts and I added in some peas and feta.

This morning I made banana-walnut oatmeal pancakes from my Betty Crocker Whole Grain cookbook (I’m on a roll with making new recipes!), topped with Smart Balance light buttery spread and maple syrup. I’m currently eating them while writing this and they came out awesome :)

I feel bad that I also got the boyfriend sick but that means we can have a sick day together :) I’m off to go lay around with him. I have work starting tomorrow for the whole weekend so I hope I can get better today!

Time for dinner

I’m glad to report that I actually followed a normal eating schedule today and had dinner before 9pm! When I was in school I had my set schedule for each day so my meals could be planned out for the same time each day. At home, it’s an entirely different story! Working retail makes it impossible to have a set schedule and when I’m not working, I wake up so late that my meals are pushed back to later times. Its been frustrating since I’d like to post all my meals but i’ve been eating dinner after my nightly post, which makes it tricky. Do you tend to eat meals at the same time everyday?

Lunch today was a spinach salad, which included the following:

  • radishes (from the boyfriend’s garden!)
  • tomato
  • carrots
  • roasted red peppers
  • a mini cucumber, sliced
  • peanuts
  • wheat germ

I figured this makes up a little for the absence of veggies last night! I also drizzled about a tbsp of generic lite italian dressing.

I was still a little hungry after this so I made myself one of my all time favorite snacks.

Later, I met my Mom in town to go walking around the ponds (we have two actual ponds in the center of my town). We did one lap (1.5 miles) in 30 minutes and then she left and I ran 3 more laps (4.5 miles) in 40 minutes. It was such a good run, I didn’t need an ipod or anything because there were so many things going on around me. I love people watching :) Then I drove home and did 15 minutes of abs in my “home gym” for a total calorie burn of 420.

I came home to these on the counter.

Yay! I love Evangeline Lilly from Lost. I’m already excited for tomorrow’s workout now!

Since I was home, I decided to have dinner with my parents. It was already 7:30pm though so we wanted something quick. I found frozen ravioli in the freezer and it seemed like the perfect solution.

After dinner I made dessert to go for the boyfriend and I. I made him a little parfait with the rest of the angel food cake, yogurt, and cool whip and me a container of cottage cheese, strawberries, and flax. I snuck some flax into his dessert too :)

I ended up cutting up 1/2 a pear to add to mine.

It’s back to work tomorrow so I’m getting a good night’s sleep in tonight and unfortunately, there’s no TGIF in the world of retail! It’s Memorial Day weekend though so it should be busy and fun :)

Not quite s’mores

I woke up this morning craving something sweet. I guess that lowfat ice cream didn’t do it for me yesterday. I’m at the boyfriends though so I had limited supplies. It was a choice between oats or sugary cereal (honeycombs, honey smacks, fruity pebbles, and cinnamon toast crunch are the current selection) so I went with the oats. I had s’mores in mind with this concoction.

  • sdc113331/2 cup quick cooking oats
  • 1/2 cup soy milk, 1/2 cup water
  • 1/2 small banana
  • 1/4 cup mini marshmallows
  • tsp wheat germ
  • tbsp almond butter

It tasted just like s’mores without the chocolate and wheat germ is a great graham cracker crust replacement!

Last night after the movies it was late already so I had cereal for dinner. No vegetables but at least I had fruit!

I used up my remaining Kashi U cereal and mixed it with 1/2 cup of Kashi heart to heart cereal. Topped it with a banana and wheat germ and added some soy milk. I love breakfast for dinner :)

Although unpictured, I had it with a tablespoon of Naturally Nutty Honey Roasted Cinnamon Peanut butter.

I opened this a few days ago, expecting nothing but the best from Naturally Nutty since I loved their butter toffee and white chocolate coconut flavors. While this pb is good, the flax and hemp really overpower the cinnamon to the point where I couldn’t taste it at all.

The plan for today is just to hang around and look for a full time job online, eventually make it home for a workout, and then possibly make dinner for my parents.
