PB On the Bottom

Happy Friday!

Until I figure out the camera situation, I hope you don’t mind some older pictures. Thursday’s breakfast was a strawberry-banana-flax bowl of oats using my Dad’s method: peanut butter on the bottom.

He’s been trying to get me on the peanut butter on the bottom train for a while now but, as a food blogger, I like my toppings to be seen. I tried it for him this time though, and it is good! It’s always a mystery whether you’ll get pb in your spoonful or not. I like making eating fun :)

My work lunches have been better than I thought. On Friday they served swordfish. I wish they wrote what kind of dish it was though. It was in an amazing sauce. I had it with a side of rice and veggies.

The desserts there are a killer. Luckily I think I will eventually get used to them and not need one every day. But for now, I can’t pass them up! Look at this presentation:

It ended up being layered red velvet cake in there!

Working in NYC is amazing. Although expensive, I’m on a mission to find some free fitness related things to do there. I went to my favorite free fitness offerings on Lululemon’s website. Not only do they have free yoga in Bryant Park on Tuesdays, Thursdays, and Sundays, but they have a run club through Central Park! Now if only my schedule would sync up to the times.

One suggestion I have for free fitness activities is to jump around between different places. Most gyms offer free day passes to try them out, or a first yoga class free at a yoga studio. I already got my first guest pass and am trying out a new gym on Saturday :)

Blogiversary

Today is my one year blogiversary! I can not believe I’ve been blogging a whole entire year. It’s seriously changed my life! Here are the top 5 things I’ve learned about through the blog world that I couldn’t live without now:

  1. Steel Cut Oats
  2. Tofu (how to cook it properly!)
  3. Flax
  4. Whole Grains
  5. Greek Yogurt

Not to mention all the motivation I’ve gotten from all you other lovely bloggers. It has definitely been the healthiest year of my life – nutrition and exercise wise.

So basically, I just wanted to say thanks for reading! Each and every one of your comments always brightens my day :)

I hope everyone had an awesome Earth day! I did my part for nature by spending a good half hour trying to capture this giant bumble bee that ventured into the house. The poor thing was buzzing away by the window for ever trying to find his way out. It felt good to help! Now lets hope he went straight to my wildflower patch to return the favor.

I started my day with sweet potato oats. My Pop made me almond stuffed sweet potatoes but I haven’t been home for a meal to eat them so I added one to my oats for breakfast, since it’s the only meal I’m always home for.

For lunch I mixed together some whole grain pasta shells, frozen spinach, and shredded cheddar cheese to make a cheesy spinach pasta bowl and ate it outside.

My Mom surprised me for dinner by bringing home some shrimp and scallops from the Asian grocery store in my town. She served shrimp fried brown rice with the stir fried scallops on the side. Delicious! Scallops are always a treat :)

It was also a good mail day. I came home to find this waiting for me.

A sample pack of Krema peanut butters (who also make Crazy Richard’s). Thank you so much Krema! It couldn’t have come at a better time.  One of these babies is about to become part of a peanut butter pie this weekend :)

Some Unkind Statistics

After working til 3 yesterday, I spent the rest of the rainy day reading The Kind Diet by Alicia Silverstone.

I’ve heard rave reviews about it and was ecstatic when I learned Mark’s Mom had ordered it for herself. I haven’t gotten too far in yet but its already reminded me why I gave up meat. Just look at some of these stats:

  • “42% of the fresh water available to Americans is used for agriculture. It takes 441 gallons of water to produce 1 pound of beef, according to the Cattleman’s Association. Dr. Georg Borgstrom, the Chair of the Food Science & Human Nutrition Dept. at Michigan State University, thinks it’s more like 2,500 gallons. One 16-ounce steak uses the amount of water you need for 6 months of showers!
  • “The poo, fertilizers, and other sludge from the meat industry not only gets into the soil, but also leaches into nearby rivers and water tables. One farm in Utah with 500,000 pigs produces more fecal matter than the 1.5 million inhabitants of Manhattan.”
  • Methane (one of the gases – like CO2 – that traps heat in the atmosphere, therefore contributing to global warming) contributed by livestock accounts for 19 percent of the total global methane emissions. This is more than the amount produced by landfills and waste treatment plants.
  • Even though corn seems to be in all our food nowadays (just ask Corn Free Cass!), only roughly 8 percent of corn grown is used for human food use in the U.S. and more than 50 percent is eaten by animals.
  • Cattle grazing is the number one factor in the destruction of the rain forest, and we’re losing 2.4 acres of it per second. Rain forest used to cover 14 percent of the Earth, but now it only covers 6 percent.

Sorry for posting such wordiness but I always forget stats like these when people ask me why I gave up meat. Now I have them easily documented :)

Can’t imagine ever giving up meat? Just go meatless one day a week! You’ll reduce your carbon footprint and possibly improve your health. There’s a whole non profit initiative called Meatless Monday about this if you are interested.

Later in the day I got a call from my sister in law to see if I wanted to join her for a spin class at her gym. Although we’ve been on shaky terms lately, I had been a little down all day about not getting a call from a job prospect I was expecting to hear from and figured working out would take my mind off it.

Good idea. After a tough 45 minutes of cycling to loud music in a dark room, the only thing I was thinking about was taking a shower.

And, since this is a food blog, let me post my amazing bowl of oats from yesterday morning:

In the bowl:

  • Almond milk
  • 1/2 mashed banana
  • Sunland cranberry vanilla pb
  • Cranberries/raisins
  • Sliced almonds
  • Flax
  • Coconut

Now that I’ve finally gotten a day off, I’m gonna work out and then spend some much needed time with the boyfriend.
