Happy Friday
Sorry for being such a horrible blogger lately. Life has been busy!
Yesterday I brought back steel cut oats since the weather was actually pretty cool. Not that I was complaining!
Mixed with half a banana and topped with Crazy Richards chunky pb, flax, raisins, walnuts, and craisins. With some black coffee on the side, for the health benefits
After that delicioso breakfast, I got out ED&BV to find a corn free dessert I could make since I had dinner plans at Corn Free Cass’s. With minimal ingredients in my house, I decided on 5 spice almond cookies. I didn’t have any 5spice, and all my vanilla extract includes corn syrup so I kinda winged it by using pumpkin pie spice and anise extract.
I taste tested one and the first bite was good, but the second had a weird aftertaste. I think I could’ve gone easier on the anise
I’ve officially renamed them licorice cookies.
Later on in the day I met up with the boyfriend and his Mom at Costco so I could take advantage and get some (moderately) cheap maple syrup.
She also treated us to lunch there. I had a slice of pizza and a berry smoothie, which didn’t look anything special.
Later on I headed over to Cass’s to have dinner with her, Miranda, and her boyfriend, Andrew. Of course I forgot to take any pictures of us! It was a lot of fun though! We all haven’t seen each other in over a month since their time at Swarovski has ended
Note to self: make time for friends more often!
We started the meal with a zucchini-eggplant casserole, compliments of Miranda.
The main event was baked macaroni and cheese, compliments of Andrew.
Although I was stuffed, I made room for dessert (obviously).
Miranda made her famous lace cookies. They’re seriously the best cookies ever! When I was little they were always my cookie of choice when my Mom took me to the Italian deli…
Anyways, back to the present, I have to go get ready for work.
