Licorice & Lace

Happy Friday :)

Sorry for being such a horrible blogger lately. Life has been busy!

Yesterday I brought back steel cut oats since the weather was actually pretty cool. Not that I was complaining!

Mixed with half a banana and topped with Crazy Richards chunky pb, flax, raisins, walnuts, and craisins. With some black coffee on the side, for the health benefits ;)

After that delicioso breakfast, I got out ED&BV to find a corn free dessert I could make since I had dinner plans at Corn Free Cass’s. With minimal ingredients in my house, I decided on 5 spice almond cookies. I didn’t have any 5spice, and all my vanilla extract includes corn syrup so I kinda winged it by using pumpkin pie spice and anise extract.

I taste tested one and the first bite was good, but the second had a weird aftertaste. I think I could’ve gone easier on the anise :( I’ve officially renamed them licorice cookies.

Later on in the day I met up with the boyfriend and his Mom at Costco so I could take advantage and get some (moderately) cheap maple syrup.

She also treated us to lunch there. I had a slice of pizza and a berry smoothie, which didn’t look anything special.

Later on I headed over to Cass’s to have dinner with her, Miranda, and her boyfriend, Andrew. Of course I forgot to take any pictures of us! It was a lot of fun though! We all haven’t seen each other in over a month since their time at Swarovski has ended :( Note to self: make time for friends more often!

We started the meal with a zucchini-eggplant casserole, compliments of Miranda.

The main event was baked macaroni and cheese, compliments of Andrew.

I love those big noodles!

Although I was stuffed, I made room for dessert (obviously).

Miranda made her famous lace cookies. They’re seriously the best cookies ever! When I was little they were always my cookie of choice when my Mom took me to the Italian deli…

Anyways, back to the present, I have to go get ready for work.

Have a great day!!!

Questions:

  1. How often do you see your friends?
  2. Do you have any childhood cookie memories?

Option 3

To my American Readers: Happy Memorial Day!!!

For everyone else, Happy Monday :) Don’t worry, I have to work too.

I’ve made a decision about the whole work thing. Instead of picking option 1 or 2, I created an option 3 and am going with that. Sorry if I’m confusing but I don’t want to bore you with details. But just so you know, there’s usually always a secret option to a dilemma if you think about it long enough!

I’ve kind of been in an exercise slump this past week. After blogging today I plan on swimming some laps. If swimming in the sunny weather can’t get me back in the groove, I don’t know what will.

Some food from the weekend:

Blueberry-almond oats.

Cascadian Farms honey nut o’s with blueberries, bananas, and strawberries.

Maple smoked salmon (brought back from BC!) cream cheese sandwich.

BBQ food – vegetable skewer, mushroom-spinach puff pastry, baked ziti.

Questions:

  1. What’s your favorite bbq food?
  2. Any plans for today?

Free Food

Happy Friday!

Since I just started my new job, I’m kind of dreading the weekend. I’d rather be working! Let’s hope these feelings last..

Thankfully, my morning went MUCH smoother yesterday :) I even had time to make a delicioso bowl of oats.

In the bowl:

  • Steel Cut Oats
  • 1/2 banana
  • Almond Milk
  • Raisins
  • Wheat Germ
  • Mighty Maple PB

It reminded me of when I was little. My Dad always used to pour cream in our cream of wheat to make it even creamier. Mmmm. Almond milk in oats is my healthier version :)

So a cool thing about where I work, they feed you lunch! The break room is set up kind of like a little buffet. From what I’ve seen so far, there’s usually a fish and chicken entree, a starch, and vegetables. Then there’s usually a salad bar with some sort of pasta or potato salad, olives, and a whole bunch of things I didn’t know what they were. I just had some rice and vegetables today, with a small roll. The food isn’t amazing, but it’s free. Which is always good.

If you’re not feeling the hot food, they have bagels and cereals, with the regulars jam, cream cheese, butter, or PB spreads. But the best part? DESSERT!

There are multiple restaurants where I work so I’m assuming these are leftover desserts or something but they’re amazing! I might be in trouble. Today I had some sort of white chocolate mousse with a thin cake bottom and white chocolate shavings on the outside. I love fancy desserts!

I didn’t get home until 8:15pm, and by that time I was starving, so I heated up a sweet potato and topped it with a box of Green Giant boxed Health Blends. My Dad threw away the box but it included white beans, yellow carrots, and some sort of green. It was okay. Obviously not better than fresh but it did the trick!

Have a great weekend!
