Rewind

Thanks for all the blogiversary wishes :) I hope we’re all blogging for many more years to come!

I had a fun food weekend so I thought I’d do a rewind post.

SUNDAY

I celebrated my blogiversary by throwing a party and eating lots of cake.

Haha, just kidding. Actually, it was my Dad’s and cousin Joe’s birthday this weekend so the cake/party was for them.

I made a frozen peanut butter pie for the event. I got the recipe here.

As I was cutting it, my Dad says “It’s made from tofu!” He was just joking because they all think I’m some crazy health freak but he was actually right. It was made from tofu! Nasoya silken tofu to be exact. After some hesitation, everyone tried it and agreed it was good :) It tasted like peanut butter ice cream pie!

I also made carrot cake muffins/cupcakes to bring to work that morning.

Sorry, I’m not a very good baked goods photographer. I had to Cassandra-fy (no corn products allowed!) the recipe a bit:

  • Used 1 tbsp flax and 3 tbsp water in place of each egg. This really works and is a great substitution for people with egg allergies.
  • Made a cream of tartar – baking soda mix in place of the baking powder
  • Replaced salt in recipe with sea salt

I also made the cream cheese filling recommended on the recipe page and put it on half. Those half didn’t turn out too well. The cream cheese caved in! Well, all that matters is they tasted good. They just weren’t fit to travel.

SATURDAY

Today was my Dad’s actual birthday. He got to pick the breakfast and he chose one of my favorites: banana walnut pancakes with maple syrup. We have them like every weekend but, as the old saying goes, don’t fix what isn’t broken! These pancakes are never disappointing.

Afterward we rollerbladed for an hour on the trail. I wore my Garmin this time on bike setting and figured out that we went 6 miles. The trail goes from town to town. It was only a short way to the next town but we couldn’t make it yet. We need a few more practice runs to build up endurance!

We made pizza for dinner – one of the best ones yet. Veggie’s always the best! He put everything we had on: broccoli, roasted red peppers, string beans, tomatoes, broccoli rabe, feta, tomato sauce, and mozzarella.

FRIDAY

I started Friday with a glorious 5 mile run. I say glorious because that’s always the word that comes to mind after I finish a great run. It’s really weird because I never use that word! I guess running is the only glorious thing I know.

Remember the stuffed sweet potato my Pop made me and I put in my oats? I finally had a chance to eat a real one. I had it with a strawberry breakstone’s 100 cal cottage cheese and string beans for lunch before heading to work.

Work food was leftovers from fried rice night. I mixed brown rice with vegetables and added some orange-ginger Shoprite brand dressing to give it some flavor. Then I topped it with peanuts. I also brought grapes on the side that I bought like a week ago and totally forgot about because I put them in the produce drawer.

I really just wanted to post that meal because I love my big glass travel bowl-mugs! They come with rubber tops with a closeable hole in the top so you can microwave them. Way better than plastic tupperware!

More work for me today. “See” you tomorrow!

Wrap it Up

So who knew there was already waterproof materials to write in the shower? After you guys told me that, I searched it and found:

An erasable shower note tablet! I’m totally getting one of these when I get my own shower.

Yesterday I started the day with homemade mini strawberry-banana pancakes, with maple syrup.

I ate double this amount. I hate eating a pancake/waffle breakfast on work days because I know I’ll get ridiculously hungry way too early. Case in point. I was ready for lunch by 11:30am but I just love pancakes too much to say no to them!

I had forgotten to bring lunch so I trekked over to the food court. It was a beautiful day out so I got a Mediterranean Wrap from Au Bon Pain and ate it outside with the intentions of beginning Michael Pollan’s book, In Defense of Food.

What I learned? It’s really hard to eat a wrap and read at the same time! I didn’t want to get my precious book dirty (I have high expectations for it), so I ended up just reading the back cover. The wrap was good but it’s so thick it’s like eating two different wraps because you can never get both sides into one bite. I tried so hard to get a bite of everything at once. It just wasn’t happening. Getting out of my store for the half hour was a nice change though, I felt so refreshed going back into work. I love nice weather!

After work I went home for dinner and had some brown rice, topped with diced tomatoes, with a side of broccoli raab.

I’m going to keep this post short and sweet because I made yesterday my rest day and have to go for a run today. Too bad today forecasts rain and yesterday was sun! Looks like I have to go hang out with the treadmill :(

Snow!

So to update you, I didn’t have work yesterday. The whole mall never opened thanks to the snow! Apparently my county was in a state of emergency.

I took those photos this morning but have been snowed in at Mark’s for the past two days. I was torn on what to do all day yesterday – on one hand I wanted to be productive but on the other hand, it’s a snow day! I split my day evenly into applying to jobs and playing around on the computer – reading blogs, playing games, and blogging myself.

Mark and I also took some time out to shovel my car out. I counted that as my workout for the day :) It was HARD work. Here’s my (mom’s – I borrowed it) car in his driveaway.

And Mark and I shoveling. There’s just something fun about being out in the snow :) I really wanted to make snow angels. I need snow pants!

I’m finally back at home after 3 days and spending some time with my snowed in parents. There’s nothing like Dad’s pancakes on a snowy morning :)
