Party Time

Hi everyone! My party was a lot of fun yesterday and the decorations turned out awesome. Of course, I have A LOT of pictures for you :)

I made sure to dress myself with a Moroccan-ish outfit. I found the gold chain in my closet and made it into a belt and then my Mom bought me gold earrings and a gold bracelet to pull it all together. I just realized the only full length shot of me was taken after the decorations were taken down but this is me, my nana & pop, and my mom.

Before the guests came we set up all the tables, centerpieces, decorations, drinks, and appetizers. Each table had a candle centerpiece, premium m&m’s, dark chocolate kisses for favors, and pita chips with hummus.

The drink of the day for me was the sangria. My aunt made it with red wine, club soda, and nectarines I believe. I probably had about 3 glasses. We also had white and red wines, lots of beer, sodas, iced green tea, and good old water.

The appetizers went out for when the guests arrived at 2. We had a tomato and mozzarella platter (can anyone remember the name of this dish? I can’t and it’s driving me crazy!), chicken sausage with spinach and cheese on a toothpick with a cherry tomato, a vegetable platter, my coconut shrimp (it all went) with mango salsa, and a foccacia bread sandwich with mozzarella and roasted red peppers.

At about 3 we put out the main course. This included penne with vegetables, olive oil, and shrimp, lasagna, my couscous, my mom’s chicken francese (which I heard was a big success – go mom! cooking isn’t usually her forte), Italian potato salad, Moroccan rubbed pork, sausage and peppers, and eggplant rollatini.

So most of the food ended up being Italian – I guess you can’t get away from your heritage when asking people to make dishes for the party! Everything was delicious though and we had quite a bit of food left over.

Dessert was a carrot cake from Costco with an apricot mousse filling. It was good but WAY too much sweet icing! That didn’t stop me from having like the largest piece ever though :) I loooove carrot cake.

There was also confetti cupcakes (best cake mix ever), mini cheesecake bites and blueberry lemon coffee cake.

Instead of booking a DJ we hooked up my Dad’s speaker system and used our ipods on shuffle. It worked great and saved us a ton of money.

The party seemed to fly by. I spent most of the time on my feet going from table to table to make sure I talked to everyone. It was so nice getting to see everyone who I haven’t seen in a while but frustrating because of course everyone asked me what I’m doing now. I graduated college and am still working retail. I hate this economy!

I just ate what I wanted at the party. I figured one day isn’t gunna kill me! I didn’t photograph my plate but I had some couscous, some pasta with shrimp, and a piece of the roasted red pepper and mozzarella sandwich. Thinking about it now, that’s a lot of carbs! For dessert, I tried a little of everything, which is the best way to go :)

Today I’m just relaxing. I did 45 minutes on the stationary bike this morning and plan on eating leftovers for the rest of the day. Hope you all had a great weekend!

Busy Bee

Hello! I’ve been a busy bee today with all my graduation party planning. It’s this Sunday already!

I need some more help with the menu. If you remember from this post, I am doing a Moroccan theme so today I searched online and found some recipes that I might cook. Quick fact about me, I am the least decisive person in the world (tons of people can vouch!) and can’t for the life of me decide on what to make.

Sooooo… I’m having a vote! I’m making a couscous dish and a shrimp dish. Here are the choices for the couscous dish:

1) Sweet and Nutty Moroccan Couscous

2) Moroccan Couscous

3) Moroccan Couscous (different recipe from above)

And here are the choices for the shrimp dish:

1) Curry Coconut Shrimp

2) Shrimp with Spiced Masala and Coconut Milk

3) Spicy Shrimp in Coconut Milk

4) Oven Baked Coconut Shrimp

Which dish for each sounds most appetizing to you? It’s sort of my cooking debut since I just got into cooking this year so I want to make something really good that people will definitely like!

Throughout all the procrastinating and party planning of today, I did manage to make some food.

Lunch was lentils with carrots and celery on top of brown rice and zucchini slices, all topped with some Parmesan cheese.

I think I’ve mentioned this in the past, but lentils seriously keep me full like no other food can soI looked up the nutritional info today to find out why. It turns out that lentils are a fiber superstar! One cup of cooked lentils has almost 16 grams of fiber, 62% of your daily needs. And, it only has 230 calories! In addition, it’s a good source of iron, folate, protein, and magnesium.

After lunch I did 50 minutes on the elliptical while watching another crazy episode of Wife Swap. This time it was a martial arts-crazed family switching with a karaoke loving one. Please someone tell me they’ve heard that they use fake families for these shows. Some of them are just unbelievable!

I also did about 20 minutes of abs and legs, including planks, side planks, lunges, squats, and torso twists. Torso twists are my new favorite ab exercise. You can do them anywhere!

For dinner I made a roasted veggie sandwich on an Arnold sandwich thin.

The roasted veggies included green peppers, carrots, and red onion, all placed on top of Tribe savory dill hummus and topped with spinach and white American cheese. On the side I had roasted broccoli.

I also had a bowl of Imagine creamy portobello soup with feta and fresh parsley, and a toasted Arnold sandwich thin half for dipping.

Active Bums

So the boyfriend decided he wanted to be a bum on his birthday and so we just spent the day around the house, which turned into a really fun day! We started it off with bowls of cereal as fuel. I had some Kashi U with blueberries, bananas, sunflower seed butter, and soy milk while he had the same but with Cheerios and real milk.

Then we spent some time outside. It was beautiful weather with only one single cloud in the blue sky!

He tended to his garden for a little but while I attempted to get some sort of a workout in by jump roping, jumping jacking, and running down his driveway a few times. He showed me some of his zucchini and they are HUGE! I think I may make some zucchini muffins later :)

After some outside time, we came inside and hooked up the Nintendo Wii, which no one in his house has played in like months. We got some tennis playing in. I love how you get your own Mii’s!

After the gaming, including a few rounds of Wii bowling, it was lunch time. His Mom made him pastina but I opted to make myself an egg salad sandwich since there were already hard boiled eggs around.

I used one egg and mixed it with hummus and dill. I topped it with lettuce and a tomato slice on an Arnold sandwich thin.

On the side I had steamed broccoli, asparagus, and zucchini, squirted with some lemon juice.

After lunch we started up the Wii Fit and did all the strength training moves together. It was so cute working out with him, side-by-side. They have a lot of moves on there, from push ups and side planks to lunges and leg twists. He got tired of it after doing 2 sets of each and I checked out the rest of Wii Fit. I ended up doing all the yoga poses and a lot of aerobics. The advanced step was the funnest! It actually turned out to be a pretty active day. I still plan on getting in some time on the elliptical though since what I did was mostly strength training.

Not sure of dinner plans yet but I’m sure it will involve cake!

Now I need some help from you guys! My Mom is throwing me a graduation party at the end of the month and we decided on a Modern Moroccan theme, which I found here at Hostess with the Mostess. I picked it because I love the look with all the jewel toned colors and such.

We’re gunna do purple, turquoise, green table clothes with gold plates and silverware and hopefully get colorful lanterns to hang and pretty candle centerpieces like in the picture.

What I need some help with is the menu! I have two dilemmas:

  1. I don’t want to do all Moroccan food, because I know not everyone likes it.
  2. I want to do a healthy-ish menu, but want people to enjoy the food.

I really don’t want to put out any potato chips as table food. Instead, I was thinking of doing hummus and other kinds of dips with pita wedges and raw veggies. Do you think that’d be ok? I feel like everyone like pita and hummus! I was also thinking about putting out some bowls of pistachios or other nuts.

For the main food, I was going to make a couscous dish, since I figured that’s pretty easy to make a lot of and not too weird that people won’t try it. Then maybe a coconut shrimp dish, and my Mom wants to order eggplant sandwiches on foccacia bread from a pizza shop. Any menu suggestions or ideas would be greatly appreciated! Also, when it comes to parties, do you think I should forgo trying to keep things healthy?
