Blogiversary

Today is my one year blogiversary! I can not believe I’ve been blogging a whole entire year. It’s seriously changed my life! Here are the top 5 things I’ve learned about through the blog world that I couldn’t live without now:

  1. Steel Cut Oats
  2. Tofu (how to cook it properly!)
  3. Flax
  4. Whole Grains
  5. Greek Yogurt

Not to mention all the motivation I’ve gotten from all you other lovely bloggers. It has definitely been the healthiest year of my life – nutrition and exercise wise.

So basically, I just wanted to say thanks for reading! Each and every one of your comments always brightens my day :)

I hope everyone had an awesome Earth day! I did my part for nature by spending a good half hour trying to capture this giant bumble bee that ventured into the house. The poor thing was buzzing away by the window for ever trying to find his way out. It felt good to help! Now lets hope he went straight to my wildflower patch to return the favor.

I started my day with sweet potato oats. My Pop made me almond stuffed sweet potatoes but I haven’t been home for a meal to eat them so I added one to my oats for breakfast, since it’s the only meal I’m always home for.

For lunch I mixed together some whole grain pasta shells, frozen spinach, and shredded cheddar cheese to make a cheesy spinach pasta bowl and ate it outside.

My Mom surprised me for dinner by bringing home some shrimp and scallops from the Asian grocery store in my town. She served shrimp fried brown rice with the stir fried scallops on the side. Delicious! Scallops are always a treat :)

It was also a good mail day. I came home to find this waiting for me.

A magazine full of good deals (I love good deals!) and…

A sample pack of Krema peanut butters (who also make Crazy Richard’s). Thank you so much Krema! It couldn’t have come at a better time.  One of these babies is about to become part of a peanut butter pie this weekend :)

Accomplishments

One thing I’ve noticed lately is that I usually come up with blogging topics in the shower. I get really excited about an idea, add to it, and then totally forget about it in the process of getting out of the shower and getting ready. Do they make waterproof notepads? If not, I need to invent one! They could stick on the wall with suction cups, sort of like those shower mirrors. I just need to figure out waterproof paper you could write on.

Anyways, yesterday – in the shower – I got to thinking about my accomplishments and how I never really record them. I got so inspired reading Caitin’s (from Healthy Tipping Point) post the other day. This girl is awesome! She has a race planned every week in April with the goal of completing 26 races by her 26th birthday. I thought about how I’m not even sure of how many races I’ve run!

We bloggers work hard to be healthy. Whether it’s working out every day, competing in races, or just plain eating well most of the time, these are accomplishments to be proud of!

My accomplishments:

  • Ran 2 5K’s, my sophomore and senior year of college
  • Ran a 10k last April in Pittsburgh
  • Worked out 6 days a week for over a year straight
  • Kept up this blog for almost one year (10 days til my blogiversary!)
  • Learned to cook! Before my senior year of college, and my introduction to the blog world, the only thing I knew how to cook was pork chops and sweet potatoes.

What have you accomplished?

Ok, on to the food! Breakfast yesterday was my organic 6 grain cereal, made with Kath’s whipped banana technique, and topped with strawberries and Crazy Richard’s peanut butter.

I got this from the peanut butter of the month club last month and finally felt like it was time to open it. Ingredients? Peanuts! And it was really, really good.

Mark accompanied me to the city since he had nothing better to do. I didn’t take any pictures because, well, I feel so touristy whipping my camera out there! I took a shot at the train station of what the empire state building would look like if it wasn’t in NYC. It’s actually pretty far away in this picture, but it looks like it’s part of these NJ suburbs. Click for a bigger picture!

Lunch was eaten at Cosi. They have a huge open flame stone oven in the middle of their restaurants, which I thought was pretty cool.

It took really long to get our food, so it must have been made with care! I got the fire roasted veggie sandwich and a strawberry banana smoothie.

Mark got a margarita pizza.

They’re supposed to have really good bread. It was good, but nothing spectacular. I went there once before and remember thinking the same thing.

I didn’t make it back home until 9pm, and was starving from such a long day. I threw a humongous sweet potato and some frozen veggies in the micro, topped it with cinnamon currant pb, and called it a night.

I’m off to get in a 4 miler before work. Have a great day!

Popcorn Time Machine

Good morning!

I’m not feeling too hot today :( I’ve had a headache since yesterday and it just won’t go away. It might be because I had movie popcorn for dinner. I’m never doing that again!

At least I had two decent meals before that. For breakfast I toasted an English muffin and topped it with Sunland Cinnamon Currant PB, Golden Delicious apple, cinnamon, and flax.

Then my training plan called for 2 miles walking, 2 miles running, 2 miles speed walking. Since it’s still raining, I had to resort to the treadmill again. This time it only took me an hour and 35 minutes since I finally learned to lower the incline on my treadmill!

Afterward, I wanted a protein packed lunch – but quick. I scoped out my grain selection and decided on bulgur since it cooks in 20 minutes. Apparently my Dad is waiting til Easter to food shop so we still have no veggies. I pulled out the only frozen bag in the fridge – corn – and stir fried it up with some onions and black beans, adding cumin in at the end.

I headed over to Mark’s after lunch and took him to Wal-mart to buy paint (he’s redoing his bathroom – yellow!)and while we were there we got some snacks for the movies. My pick:

Then unfortunately we decided to get $8 popcorn anyways and proceeded to munch on half the bag during Hot Tub Time Machine. The movie was good, the stomach ache I got after wasn’t! I had meant to eat dinner after but was too full to eat anything for the rest of the night.

I’m gunna take a page out of Caroline’s book and have a clean eating day today! Hope you have a wonderful Wednesday :)
