The Body Mirage

I hope everyone with snow enjoyed the snow day yesterday! Mine was extremely uneventful, as planned.

I started working out again for about the past two months. I noticed that when I’m working out, I feel great about my body. I haven’t wanted to lose weight. I’m perfectly content with where I’m at since I know I’m doing what’s best for my body. If weight comes off because I’m burning calories and toning, then fine. If not, that’s okay too.

Then last weekend I made ice cream cone confetti cupcakes for my niece’s birthday party (which are just perfect for kids by the way!).

I ate two of them and I automatically started feeling overweight and self conscious. I know that I didn’t gain weight from eating those two cupcakes. I know my body still looks exactly the same from before I ate them. But I still can’t shake the bad body image I have from it. Maybe it’s the body’s way of tricking me into eating healthy all the time. Does this happen to you? Do you find yourself happier with your body when you know you’re treating it right?

On to the food!

I started my snow day with a warm bowl of banana-apple-almond-wheat germ-honey oats, topped with Peanut butter & Company’s White Chocolate Wonderful.

This was one filling breakfast. I had woken up late so I had it around 11 and it was more like a filling brunch. I ended up only eating a blueberry muffin around 3 to hold me over til dinner time.

For dinner Mark’s Mom was making chicken soup and chicken legs. She kindly asked me what I would like because she knows I don’t eat chicken and I decided on salmon again. It’s a rare occasion I get salmon and it’s so ridiculously delicious! Note to self: Buy more often.

I had it baked with some veggies roasted on top. I also had a camera shy sweet potato on the side since it was still in the microwave when the picture taking was commencing.

I have work today. I need to go out and be productive after a day of staying inside. Have a great Thursday!

Bummer

Happy hump day! Unless you’re like me, and totally snowed in. At least I don’t think we’re going to get a crazy amount of snow, it’s just going to be snowing all day so I can’t leave the house. Bummer. Good thing I have my emergency work out clothes bag in my car ’cause I happen to be stuck at the boyfriend’s :)

Yesterday after doing 40 minutes on the bike, I continued on to my Wii Active 30 day challenge, where they told me I won’t be able to finish it in 30 days. Bummer again. I’m continuing it anyways of course but I feel like the workouts are getting shorter and shorter when they should be getting longer and longer!

For breakfast I made some frozen berry – banana steel cut oats, topped with chia seeds and PB & Co dark chocolate dreams  peanut butter.

For lunch I looked in my refrigerator to find tons of veggies getting ready to go bad. I had to save them! It seemed like the perfect chance to use my most recent purchase from TJ Maxx:

I spent an hour in there the other day deciding on whether to buy the walnut oil or the grapeseed  oil. I went with walnut because grapeseed sounds more common but I plan on getting that one next. TJ Maxx has good food stuff sometimes. I love how you never know what you’ll find. They had Justin’s Almond butter (for 7.99 so I passed), agave nectar (picked up), raw honey (the boyfriend picked up), and even truffle risotto (the boyfriend picked that up too).

I’ve never used an oil other than olive so I wasn’t sure to expect. It smelled like burnt popcorn to me but I’m guessing that’s just the roasted walnut smell.

I stir fried mushrooms, broccoli, spinach, chickpeas, and walnuts in the oil and served it all over bulgur. Bulgur is one of my very favorite grains that I can only ever find at Whole Foods in the bulk section. Interesting fact: Arab, Israeli, Egyptian, and Roman civilizations record eating bulgur (dried cooked wheat) as early as 1,000 BC. That’s one old grain!

It has a slightly nutty taste and since I haven’t had it in a while, I couldn’t tell if the walnut oil made the food nutty or if it was just the bulgur.

After I decided to take a stab at organizing my room since it was really a mess. I’ll spare you the photos. I ended up having to put my food cart into my closet for pajama storage and then use the longer shoe rack my Mom got me as my food shelf because it didn’t fit in my closet. At least I got to go through all my food and see what I had. I totally forgot I still have an unopened Sunflower Seed Butter jar. It was an exciting discovery :)

I ate dinner at Mark’s. His Mom made salmon with a side of delicious veggies including peppers, potatoes, and broccoli.

I have no plan for today. I might play some wii, get on the elliptical for a bit, do some wii active, watch movies, convince everyone here to play The Office Clue board game, bake something sweet, rewatch Lost on the DVR,  or actually be productive and apply to some jobs or plan my itinerary for Vancouver. The possibilities are endless (like in my giveaway!).

Four Foods

Happy Friday! That’s just for you readers with jobs. I actually hate the weekends because I can’t hope that I’ll have a response from a job I’ve applied to in my gmail inbox :( During the week it’s actually exciting everytime I log in. You never know what’ll be in there!

So keeping on track with my jobless depression, none of  you had any exciting things going on in their lives to share with me either. I guess January never is too exciting of a month. Either way, theres one thing that always gets me excited – good food!

Some exciting food experiences from yesterday -

Trying New Things: Chickpea burger, made with chickpeas, onion-parsley pb, and ww flour and topped with white cheddar cheese – with a side of okra.

The Return of Fruit: Banana and blueberries topped with wheat germ with a side of PB&Co’s White Chocolate Wonderful

Kiddie Waffles: Raisin-walnut waffle sticks, dipped in Williams-Sonoma gingerbread butter.

Comfort food: Good ol’ spaghetti and clams.
