Happy Sunday bloggies!

While I didn’t do much this weekend besides watch tons of movies with the bf (Transformers 2 – disappointing, Independence Day – as good as I remembered, Observe & Report – I fell asleep, Kill Bill 2 – I liked). Watch any good movies this weekend?

Besides laying in front of the TV, I did make time to get out biking yesterday and do an hour of Wii Fit exercises this morning. I even got my Dad to do some yoga with me. THAT was interesting. Anddd I also made a lot of delicious eats!

Breakfast on Saturday was French Toast. How autumny is my placemat? There’s a really cute scarecrow hidden under my plate.

Lunch was a quick 5 minute meal – Near East Parmesan couscous with added Great Northern beans, feta, and spinach. Look, it wilted!!

For dinner I made mustard-maple salmon with brown rice and sauteed kale. For the salmon, I just combined a tablespoon of mustard with about 1/2 a tablespoon of maple syrup and brushed it on before baking. Next time I think I’ll reapply half way though. The flavor got lost a little bit.

Then there was dessert. I finally gathered all the decorative pumpkins around Mark’s house and did some surgery on them – cutting them open, deseeding, and baking. The end result? Pumpkin pie! Which I unfortunately forgot to take a photo of until I was halfway through my slice. That’s how good it was!

To make the pie I combined 1 1/2 cup pumpkin, with 1 cup sugar, a 15 oz can of sweet condensed milk, 2 eggs, and 1.5 tsp pumpkin pie spice and then poured it in a premade pie shell and baked at 450 for 15 minutes and then at 325 for 45 minutes. Definitely not healthy but sooo delicious!

This morning’s breakfast included a slice of Nature’s Pride 12 grain bread, toasted, with PB Loco Sumatra Cinnamon and Raisin with a small banana with flax on the side.

I was surprised at the peanut butter – it was actually, as the jar says, peanutbutterlicious! The texture is very similar to pb & co’s Cinnamon Raisin Swirl, except a little less grainy. There are tons of raisins throughout, which is how I like it :)

Breadmaking & Books

Heyyy Bloggies!

Long time no see! My parents have actually been away on vacay for the past 2 weeks and they got back Friday night so I’ve been hanging out with them (and working). I’ve been missing my family time!

I feel like I have so much to tell you – a restaurant review from Friday night and yummy pics of some French food – but I think I’ll just stick to yesterday’s food right now because I made sure to use a cute halloween plate and I don’t want it to get too outdated.

I’m currently making bread too, which is really exciting because it’s the first time I’m using my new bread maker! I bought a box mix (haven’t had the chance to buy all the separate ingredients) for Hawaiian Sweet bread.

I didn’t know how loud it is though. Seriously, if you want to wake people up, buy a bread maker. I actually just heard my Mom in the hallway now. Sorry Mom! All I wanted to do was make her fresh bread for when she woke up :(

Back to yesterday. I hope everyone had an awesome Halloween! I actually just worked from 1-9 (and only saw like 4 people dressed up there!) and it was really really busy. I guess they don’t celebrate Halloween in other countries! It was a little depressing. I thought they would have kids trick or treating but the mall did that on Friday instead.

Yesterday before work I had a delicious bowl of plain banana walnut flax oats (with PB) for breakfast.

And some un-pictured chili for dinner at work because I ate it in a ultra boring tupperware container. When I got home I had some goodies waiting for me. My first peanut butter of the month delivery finally arrived!

I absolutely cannot wait to try the PB Loco. PB & Co’s Cinnamon Raisin Swirl is my all time fav so I can’t wait to see how this one compares. I also got my Borders book order that I placed after finally using a gift card I had.

I feel that I’ve been overeating a bit lately so I thought Intuitive Eating might get me back on track! And I just really wanted to read Michael Pollan’s book after hearing about it all time. What are your favorite foodie books?

I want to get on the bike quick now before going over to see my neice and my brother’s new puppy. Be ready for some ridiculously cute puppy pics tomorrow!

On My Own

Before getting to this morning’s breakfast, I have to post my dessert from last night because it was just that good. I’m really getting into the whole 4th of July thing with red, white, and blue snacks all the time!

This bowl of goodness contains:

  • 1/2 banana, sliced
  • 3 strawberries, sliced
  • 1/4 cup raspberries
  • 1/4 cup blueberries
  • 1/2 cup Edy’s Red, White, & No More Blues ice cream
  • tsp of wheat germ
  • 2 tsp of peanuts

It was delicious!

Back to the present, this morning I woke up at the boyfriend’s and made myself a bowl of Bob Red Mill’s 5 grain hot cereal, with flaxseed.

In the mix was 3/4 cup water, 1/2 cup skim milk, 1/4 cup raspberries, 1/2 a banana, 5 cherries, a tbsp of PB Loco white chocolate raspberry pb and wheat germ. It tasted like regular Quaker oatmeal to me, nothing special but very creamy.

Then I got on the elliptical for 50 minutes, followed by an arm workout using whatever I could find around the house, including 2 jars of nut butter as weights and pushups on the dog’s (whose feeling much better by the way!) rug. Whats your favorite strength training move to do using only household items?

I showered afterward and took off for the doctor’s office. I was finally going to find out what’s wrong with my leg so I can run again! I was also excited to find out my body fat percentage. My boyfriend read some article about how some people think they’re healthy because they work out all the time but if your body fat index is too low they’re actually not and has been bugging me to find mine out for a few days now.

Unfortunately, after sitting in the office waiting for 20 minutes, the receptionist calls me up and tells me my insurance is inactive, beginning YESTERDAY! I thought they at least give me 3 months after graduation. I’m pretty bummed out now and guess I will just continue to do low impact exercises until my leg heals itself. I’m on my own for this injury!

I came home after the doctor to make lunch. I wasn’t feeling up to cooking anything extravagant so I baked the spaghetti squash I’ve had on the counter for a week now and added some tomato sauce, ricotta, and fresh basil for an easy meal.

Now I’m debating on taking a trip to Whole Foods with the boyfriend’s sister. I’ll always take a free ride there since it’s all the way in Jersey but I did tell my Mom I’d cook her dinner tonight and am not sure if I’d be home in time. Decisions, decisions…
