While I didn’t do much this weekend besides watch tons of movies with the bf (Transformers 2 – disappointing, Independence Day – as good as I remembered, Observe & Report – I fell asleep, Kill Bill 2 – I liked). Watch any good movies this weekend?
Besides laying in front of the TV, I did make time to get out biking yesterday and do an hour of Wii Fit exercises this morning. I even got my Dad to do some yoga with me. THAT was interesting. Anddd I also made a lot of delicious eats!
Breakfast on Saturday was French Toast. How autumny is my placemat? There’s a really cute scarecrow hidden under my plate.

Lunch was a quick 5 minute meal – Near East Parmesan couscous with added Great Northern beans, feta, and spinach. Look, it wilted!!


For dinner I made mustard-maple salmon with brown rice and sauteed kale. For the salmon, I just combined a tablespoon of mustard with about 1/2 a tablespoon of maple syrup and brushed it on before baking. Next time I think I’ll reapply half way though. The flavor got lost a little bit.

Then there was dessert. I finally gathered all the decorative pumpkins around Mark’s house and did some surgery on them – cutting them open, deseeding, and baking. The end result? Pumpkin pie! Which I unfortunately forgot to take a photo of until I was halfway through my slice. That’s how good it was!


To make the pie I combined 1 1/2 cup pumpkin, with 1 cup sugar, a 15 oz can of sweet condensed milk, 2 eggs, and 1.5 tsp pumpkin pie spice and then poured it in a premade pie shell and baked at 450 for 15 minutes and then at 325 for 45 minutes. Definitely not healthy but sooo delicious!
This morning’s breakfast included a slice of Nature’s Pride 12 grain bread, toasted, with PB Loco Sumatra Cinnamon and Raisin with a small banana with flax on the side.


I was surprised at the peanut butter – it was actually, as the jar says, peanutbutterlicious! The texture is very similar to pb & co’s Cinnamon Raisin Swirl, except a little less grainy. There are tons of raisins throughout, which is how I like it
