End of Summer

Happy Lazy Sunday!

Can you  believe we’re halfway through August already? Where did the summer go?! I’ve seemed to have missed it. I’m making sure to get it my fair share of summer fruit before the cold front comes in.

And yes, I did make the river of blueberries purposely :) It’s fun to play with food.

I also been blending up a lot of smoothies. My favorite was a mango pineapple one. Into the blender:

  • 1 mango
  • 1 cup of pineapple chunks
  • 1 tbsp pineapple juice
  • 1 cup of ice

Throughout the hectic summer, I’ve still been making sure to be home for pizza night. Last night was whole wheat crust with kale, tomatoes, and mushrooms.

The tomatoes are from my garden. I’ve said this before but I’ll say it again: if you don’t have a garden, make one! Even if you don’t have a lot of room, you can grow at least a few plants in pots. It’s so worth it for the produce you get. This year I even grew everything organically from seed.

It’s a jungle out there. I’m most excited about my purple peppers. I don’t think I’ve ever had one before.

Happy Monday!

Guess what finally returned this Friday after many weeks of misses? Pizza night!! We started off the new streak well – one whole wheat veggie pizza and one shrimp white pizza.

As usual, the wheat pizza came out the winner. Personally, I always think whole wheat products taste better than their nutrition lacking  white counterparts.

I worked down in the city Saturday and had planned on checking out a new gym but, to my disappointment, pretty much all the gyms in my area are closed on weekends! Luckily I walked into a NYSC to find that they were at least open late on Saturdays. The sales guy left me a message saying he’ll give me a 3 day pass so I hope I can try it out this week!

Sunday I was in the kitchen all day. Well first I started the day with a run and a quick stop at the grocery store. Can you spot anything peculiar in this section?

News Flash: Barney butter has made it to stores in the North East!

I didn’t buy that tiny little jar for 5.99 but it’s good to know it’s there. What I did buy were all the ingredients to make homemade manicotti!

We were celebrating my Pop’s birthday at dinner. Usually we buy manicotti from an Italian store in the Bronx but since no one made it down there, I decided to try my hand at them. The recipe called for spooning the ricotta mixture into the pasta shells but instead I put the mixture in a ziploc and cut a hole in the corner so I could squeeze it out like I was stuffing cannoli. Fun!

Not to brag or anything but I heard they came out better than the ones store bought :)

Second, I baked a cake, carrot to be exact. I’m calling it tropical carrot cake because it included pineapple and coconut. I know carrot cake supposedly always has pineapple in it but I’ve never had one with it before. I took it to another level and even whipped up my own cream cheese frosting. Look how smooth!

Although putting the icing on the cake isn’t my strong point.

All that work in the kitchen paid off when dinner was served.

Weekend of Pizza

I love Mondays. It’s the start of a new week. Who knows what will happen?

This weekend was the weekend of pizza.

After I got out of work Friday night at like 9, Mark asked me to head over to Walmart to pick some stuff up. We were both hungry, and got the craving for French bread pizza. I looked at the Red Baron 5 Cheese & Garlic frozen ones and it contained 23g of fat and 37% of your daily sodium! 23g of fat? I thought that sounded a little excessive.

Instead, we bought the ingredients to make our own – wheat French bread, shredded mozzarella, tomato sauce, and olives. It took like 8 minutes to assemble and 15 to cook and only clocked in at 10g of fat. And, it tasted delicious :)

I went to free yoga on Saturday at the Lululemon store. I just loved the instructor. It was a great class! It was kinda chilly out that day though so I came home and made homemade soup for lunch. I just put in whatever I had and it kind of turned into a minestrone.

In the pot:

  • vegetable broth
  • onions
  • kale
  • beans
  • diced tomatoes
  • orzo

I didn’t know that my Dad had moved our regular pizza night to Saturday since I worked Friday night. So it was pizza again for dinner! Real pizza though, not pizza on bread, so I didn’t mind. We made a white kale pizza and a plain on wheat.

The kale topping turned into kale chips = really good! And that one glass of wine knocked me out of commission until the next morning. I’m a lightweight.

Sunday morning I woke up to the smell of fresh biscuits.

We never have biscuits for breakfast so it was a nice surprise from eating the regular oats – pancakes – waffles – cereal – french toast lineup. I felt very British. We ate them with jam. I only wish we had some fruit to eat on the side.

Oh, and thanks for all the info about that sushi. I didn’t realize they sweetened it with agave nectar. My taste buds don’t like me adding sweeteners to anything besides desserts, let alone sushi! That was definitely why I wasn’t crazy about it. Bring on the daikon!
