A Simple Life

Happy Monday!

I hope everyone had a fun weekend! I had a weekend of working. I’m sticking by the notion that if you go to work happy, work will be a happy place! So far it’s been working for me :)

My life has been a bit stressful for the past couple of days. I’m not a stress eater, instead I usually eat less food and less exciting foods. So unexciting that I hardly took any pictures.

I made quite a few salads. My favorite was just plain with cherry tomatoes, pepitas, and Italian dressing. Sometimes simple is best.

I also treated myself to an Au Bon Pain Mediterranean Wrap since someone else brought in a wrap to work and I started thinking about it all day.

It was totally worth the 7 dollars. Whoever made it had superior wrapping skills. I got a little bit of everything with every bite.

Breakfasts were simple as well.  Example: Cascadian Farms Honey Nut O’s with blueberries, nectarine, and almond milk.

Even with my non appetite, I managed to have pasta on Sunday. I guess that’s the Italian in me!

For the past 2 days I’ve been spending my time with my nose in a book, studying up for a meeting I have tomorrow. Unfortunately I’ve been watching this pest at the same time.

Don’t let the pictures fool you, she’s laid down for maybe 4 minutes! I guess I should go give her some attention…

If You’re Like Me

If you’re like me, you have tons of others blogger’s recipes bookmarked and have taken place in every blogging craze from pumpkin oats to banana froyo.

If you’re like me, you’ve learned of new foods through blogging and have expanded your vocabulary by including words such as quinoa and kabocha.

If you’re like me, you try to infiltrate these health superfoods into your diet as much as possible.

Quinoa is a tough one for me. It is SUPER healthy but the taste, in my opinion, is mediocre. I’ve learned that I much prefer it as a breakfast food than a dinner side. Some facts about this superfood:

  • Although usually considered a grain, quinoa is actually related to leafy greens such as spinach.
  • It was once considered “the Gold of the Incas” for increasing the stamina of Incan warriors
  • Is high in protein AND is a complete protein (includes all 9 essential amino acids)
  • Is also a good source of manganese, magnesium, iron, copper, and phosphorus

Tip: Rinse quinoa well before cooking or it retains a bitter taste.

I cooked 1/2 a cup of quinoa in 1 cup of almond milk and a tsp of vanilla. Then I mixed in chia seeds and sprinkled almonds and blueberries on top.

I was at work for lunch. Luckily, my Mom had asked my Nana (grandmother) to bring a salad to dinner the night before. She ended up bringing a small salad for like 8 of us so I got to save it for lunch yesterday.

It had SO much in it: chickpeas, spinach, lettuce, carrots, olives, peppers, onions…

Then I finished off with dessert. Cassandra had brought me in a piece of homemade cheesecake. It was amazing. I loved the chocolate crust! Cheesecake should always have a chocolate crust :)

I’ve been eye-ing up these portobello’s in my fridge for almost a week now so last night I decided to do something about it. They looked the perfect size for stuffed mushrooms so I looked up a recipe on Recipezaar and decided on Crab Stuffed Mushrooms. I figured I’d keep going with my seafood streak.

I served them over a bed of spinach. They turned out really yummy but filling. I actually only ate two and decided to save two for my Mom. She doesn’t like seafood but I don’t think she’ll even notice the crab ;)

Now it’s off to work today and tomorrow. Then Sunday I want to go see Shutter Island, but it’s rating on Rotten Tomatoes keeps going down. It was in the 80s and now it’s in the 60s, and it didn’t even come out yet. I hope it’s good!

Mystery Food

I spent Tuesday without a camera so had nothing to post about yesterday. Then I forgot my lunch for work yesterday so I got to treat myself to some Au Bon Pain. I got the chickpea olive salad. It has everything that should be in a salad -

And one thing that shouldn’t be in a salad – carrots. I hate carrots in my salad! What’s you most hated salad addition?

They also give you a packet of dressing with your salad so I chose Balsamic. I was a bit annoyed the guy “forgot” give me my mall discount after I told him to. He said he’ll “give it to me next time.” Of course he will since I’m supposed to get it everytime!

After work I switched into jeans and met my friends at one of their colleges to go to some Indian event she had to attend for a class. I agreed to go for the chance to try some real Indian food. And low and behold, they served food.

Everything was unlabled though so I’m not really sure what I ate. There was what I assume is curried rice, which I wasn’t a fan of. Then there was some sort of tofu product in a sauce. This was delicious! They said it wasn’t tofu though, it was made out of dairy. I can’t find what it was online so if anyone has any idea let me know!

I also had some (unpictured) rice pudding. It was good but weird because I’m used to it being topped with cinnamon. Instead it was topped with some sort of spice. I assumed curry but just because I don’t know any other Indian spices. Sorry, I’m an Indian food newbie!

We tried to get henna tattoos but the line was way too long. Some Colombian guy gave me a fake one once in Costa Rica because it only lasted like 4 days. I’m too indecisive to get a real one so henna sounds fun!

Now I’m off to make some breakfast. Most likely….oatmeal. And then I get to catch up on all your blogs. Yay! “See” you tomorrow :)
