Early Xmas Fever

Good morning!

Yes, I have realized that my Christmas excitement has come a little early (3 months and 6 days to be exact). And I swear I didn’t plan out my breakfast this morning but as I sat down to take a picture, I realized that I somehow subconciously made myself a bowl of lovely Christmas oats!

Too early for them or not, they were delicious. In the bowl went:

  • Steel cut oats
  • Almond milk
  • Banana
  • Vanilla
  • Wheat bran
  • Chia Seeds
  • Unsweetened Coconut
  • Craisins
  • Naturally Nutty Vanilla PB

I’ll save my gingerbread and hot chocolate oat combos for closer to the holidays :)

Last night I did 45 minutes on the stationary bike before bed just to wake up to get back on it for 40 minutes this morning. That’s why I like keeping my workouts to either the morning or the evening. I read an article the other day and the woman in it said she works out twice a day, morning and evening. Do you (or would you) ever work out twice a day? I wouldn’t like to split my workouts up. First of all, I’d rather just get it over with and secondly, then I’d have to shower twice a day. Not very environmentally friendly!

Lunch at work yesterday was pretty boring – the same thing I’ve been eating at work every day. At least I have a picture this time!

My Dad bought me these new veggie burgers. They’re actually supposed to be kept refrigerated, not frozen. They’re okay but, oddly enough, the first time I made them I thought they smelled like bacon. On subsequent times of making them, I realized they actually smell like dog treats :/ I’m not the only one who has said so! Anyways, I’ll be happy when I finish them!

At work I also had a carrot cake Clif bar and a Glenny’s brown rice marshmallow treat that a coworker brought in for me to try.

When I got home last night, the parents had eaten already so I was on my own for dinner. It was already around 8:30 by the time I finished biking so I made a pumpkin – sunflower seed butter – flax sandwich with some mango on the side.

I’m off to work today again and then off for the weekend. TGIF!

Autumn in a Bowl

Good morning!

This morning I drive home from Mark’s with pumpkin still on the brain, thinking of either pumpkin oats or waffles for breakfast. I get home and Dad – gasp – says he’s all pumpkined out! Already?! Unfortunately for him, I am just getting started. He apparently finished all my pumpkin muffins, had been drinking pumpkin beer, and ate my pumpkin waffles the other day. Anyways, the daughter always gets her way and I made us pumpkin oats anyways.

In the bowl:

It was, to me, the oatmeal  of all oatmeals :) Basically autumn in a bowl! And of course I ate it with my pumpkin pie coffee on the side.

Last night I needed a quick dinner (it was already like 9pm by the time I even thought about dinner!). Breakfast for dinner sounded good.

My  ultimate egg sandwich. Fried egg on top of spinach, white American cheese, and fakin bacon. I felt like I needed some veggies on the side so I microwaved some frozen zucchini.

And then…. I had hot chocolate – the first of the season!

Can you tell I’m ready for Christmas already? I LOOOVE holidays and themes and just the holiday season in general. Now through December is definitely my favorite time of the year! Do you love the holidays or just think of them as a stressful time? I try to do my Xmas shopping ultra early (I’m half way done already!) so I don’t have to stress about it later.

Sun, Shop, & Savor

I made it to the grocery store this morning, managed to avoid the inner aisles and just stick to the outside sections, and came home with quite the healthy selection. I didn’t even buy ice cream – woo hoo! I think I may finally be cleared of my recent addiction to it.

I think I saved like 5 dollars in coupons. Score! What’s your take on coupons – do you use them or not?

After putting everything away, I hopped on the stationary bike for 45 minutes and then went outside to finish my workout in the SUN. It finally feels like summer! I did some abs workouts on the pool deck and then jumped in – it was FREEZING from rain water – and did laps for 5 minutes, non-stop. It doesn’t seem like long but man, swimming laps are hard!

I came inside after and made lunch for my Dad and I. I bought a tin of sardines way back when after hearing some health benefits of them and decided this was as good a time as any to open them so I made us some Sardine Sandwiches.

Each sandwich included:

  • 2 sardines
  • 2 tsp goat cheese
  • tsp dijon mustard
  • arugula
  • onion slices
  • carrot slices

I was a little skeptical of the fishy smell at first but the sandwiches were yummy. We ate them outside on the deck with a side of raw sliced red bell pepper, broccoli, and the new dill Tribe hummus.

My Dad said the hummus tasted like rye bread to him lol. I thought it was great.

When the mail came, I got a fun surprise. Foodbuzz sent me a coupon and recipe book for Nakano Seasoned Rice Vinegar. I’ve been waiting for this because I already have a recipe picked out!

Dinner was had at the boyfriend’s house. His Mom made stuffed portobello mushrooms while I made brown rice and black beans (which aren’t done yet so I’m going to post without a pic!). The portobellos were stuffed with tomatos, red onions, the mushroom stems, and some oil. Delicious!

We also had some roasted zucchini on the side.

Instead of going to the movies we went to blockbuster and opted for a night in since the movies we really wanna see are coming out next week (Bruno & Harry Potter). We have three choices for tonight: The Prestige, Zack & Miri make a Porno, or Underworld.We’ll see how many we get through!
