Weekend of Pizza

I love Mondays. It’s the start of a new week. Who knows what will happen?

This weekend was the weekend of pizza.

After I got out of work Friday night at like 9, Mark asked me to head over to Walmart to pick some stuff up. We were both hungry, and got the craving for French bread pizza. I looked at the Red Baron 5 Cheese & Garlic frozen ones and it contained 23g of fat and 37% of your daily sodium! 23g of fat? I thought that sounded a little excessive.

Instead, we bought the ingredients to make our own – wheat French bread, shredded mozzarella, tomato sauce, and olives. It took like 8 minutes to assemble and 15 to cook and only clocked in at 10g of fat. And, it tasted delicious :)

I went to free yoga on Saturday at the Lululemon store. I just loved the instructor. It was a great class! It was kinda chilly out that day though so I came home and made homemade soup for lunch. I just put in whatever I had and it kind of turned into a minestrone.

In the pot:

  • vegetable broth
  • onions
  • kale
  • beans
  • diced tomatoes
  • orzo

I didn’t know that my Dad had moved our regular pizza night to Saturday since I worked Friday night. So it was pizza again for dinner! Real pizza though, not pizza on bread, so I didn’t mind. We made a white kale pizza and a plain on wheat.

The kale topping turned into kale chips = really good! And that one glass of wine knocked me out of commission until the next morning. I’m a lightweight.

Sunday morning I woke up to the smell of fresh biscuits.

We never have biscuits for breakfast so it was a nice surprise from eating the regular oats – pancakes – waffles – cereal – french toast lineup. I felt very British. We ate them with jam. I only wish we had some fruit to eat on the side.

Oh, and thanks for all the info about that sushi. I didn’t realize they sweetened it with agave nectar. My taste buds don’t like me adding sweeteners to anything besides desserts, let alone sushi! That was definitely why I wasn’t crazy about it. Bring on the daikon!

Sorry to talk about my being sick yet again, but hopefully this is my last sick post! I am working 16 hours on black Friday so I really hope I am 100% by then. I feel fine during the day but then at night I find myself tossing and turning from a stuffy nose and waking up coughing. It’s really annoying :(

The upside to being sick? I watched all my tv shows and got the scoop on new ones coming out. Did you know NBC is coming out with a food based show called United Plates of America? In it, couples compete against others to open up a restaurant. The challenges have to deal with their restaurant’s concept, menu, and marketability, and their ability to manage staff.

The prize is supposedly the biggest in reality tv history – the winning couple gets the opportunity to open up a restaurant chain in 4 American cities. The winner will be selected by a panel of some of the most important names in both the dining and business worlds who will invest their own money in the final restaurant chain and have a huge stake in the game’s winner. It’s from the producers of Top Chef & Project Runway so I’ll definitely be watching! They’re only doing casting right now though so it’ll be a little of a wait. That’s probably why when I tried to find an image of the show, I could only find this:

When I haven’t been watching TV, I’ve been eating. The boyfriend and I went out to Chili’s one night and I was extremely surprised to find….

Black bean burgers! Who knew Chili’s catered a little bit to vegetarians? I was so excited they had these but was let down when it was really dry and unflavorful. I think they need to coach their chefs that black bean burgers don’t have to be cooked nearly as long as real ones.

I also finished off the leftover kale-bean soup.

And made an acorn squash, stuffed with wheat berries, cinnamon, and clementine slices for dinner last night.

Since this has been a mostly TV post, what’s your favorite show? I currently watch Top Chef, 30 Rock, and the Office. Lost is also high on my list and Friends is my all-time favorite (I own all the dvds!).

Weekend Grains

Good morning. I love Sundays! I’m currently hanging out by the Christmas tree with a snowman mug of coffee to warm me up. I can’t wait til next weekend where it’ll be actually normal to have my Christmas tree up and we can open the blinds for the neighborhood reveal.

Update: I’m still sick. But functional at least! I feel like I more have a cold now. It’s killing me though I can’t work out because my stuffiness but I don’t think breathing heavily will go over well..

I’ve been eating some repetitive foods. Sorry! All of them whole grain though :) Mostly this soup I made – veggie broth, barley, kale, kidney beans, onions, and carrots.

Lunch has been mostly grain dishes. Here is some spiced quinoa with mushrooms, spinach, and peanuts. I used coriander and cumin to spice it but it wasn’t enough. Definitely needs more next time!

And don’t forget Friday night pizzas! This week was a good variation – spinach, tomatoes, and mushrooms on the first pizza and roasted peppers and olives for the second.
