Uncle Frank’s Pizza

Good evening blog world!

Thanks for the well wishes yesterday.. I’m definitely feeling better today! I started the day with a bowl of Barbara’s Shredded Oats with almond milk, nectarine slices, and sunflower seed butter.

Then it was a loooong, busy day at work – but I won’t get into that. At least I brought a good lunch to give me a boost in the middle of the day!

Salad with feta, yellow tomatoes, cucumbers, avocado, and herb flavored vinegar. Side of lentil soup.

When I got home, Dad was making his weekly Friday night pizza. Tonight was a garden veggie pizza that included broccoli, olives, and yellow peppers. Delicious!

We have big plans to open Uncle Frank’s pizza shop :) Ok, not really but it was fun to talk about it. My cousin works at the most popular pizza place in town and now all the kids that work there call my Dad Uncle Frank when he comes in. It’s pretty funny.

After dinner I headed over to Mark’s and was surprised to not be greeted by my furry friend Oliver. I asked around and found out he got a really short haircut today and was embarassed. How cute is he!? You can’t tell from this picture but he’s so skinny with no fur! He looks like a skeleton dog.

I have work tomorrow, Sunday, and Monday. At least the thoughts of my Tuesday day in the city with Mom that I prepared for her birthday (see below) will help me make it through this long weekend!

Yes, she requested to go to the Peanut butter and co sandwich shop herself! Since we’re going to be in Soho anyways, I’m also gonna take her to Stogo for some healthy non dairy frozen dessert after being tempted recently by Olga’s multiple visits. I’m not sure where we will go for dinner yet. Any good dinner restaurant recommendations for NYC?

Tomorrow work is 11-7 and then it’s Mark’s little sister’s 18th birthday so we’re probably going out right after. I should be back on Sunday! Have a great weekend :)

Happy September!

September’s my favorite month because

A) Autumn begins

B) My birthday is on the 29th!

And guess what?! I started September out right. This morning I RAN :)

And I’m not gonna lie – it was hard! I didn’t realize how much of an out of shape runner I’d be after an almost 3 month hiatus. I thought I’d be able to jump right back in and be fine. Instead, I’ll have to start out easy. This summer went by so fast, I can’t believe it’s been 3 months since I got hurt.

Anyways, I was all excited to use my Garmin for the first time on a run and it was taking forever to locate satellites so I ended up just using it as a stopwatch and got no stats whatsoever from it. I’m a bit slow technologically. Help me out here! Do I need to stay in one place while it searches for satellites? I was walking with it so maybe that was the problem.

I left from Mark’s house, which has so many more routes to take than mine. I’m already mapping out runs in my head for the fall. I just want to get right out there again! It was a good run – I had no ipod and just passed the time by looking at my surroundings. Weird fact about me: I don’t like music. I listen to it while driving and that’s enough for me. Do you need music while you run?

I mapped my run on mapmyrun.com when I got home and it says I ran about 3.7 miles in 40 minutes. I’ll wait a few days before I run again.

I’m excited for tomorrow because my Dad and I are finally hitting the bike trail in our town. He rollerblades while I bike, although I’m thinking of picking up rollerblading myself to switch things up a little bit. I was just never a very strong rollerskater when I was little so I don’t know how I’d be with rollerblading!

When I got home after my run I refueled with a bowl of warm Wheatena. It’s only 54 degrees here – a cool morning and I love it!

Yesterday’s Food

For breakfast I made strawberry waffles and they were so bland. I don’t know what I left out! Even the maple syrup wasn’t sweet enough. I think there was something goin on with my taste buds. Maple syrup should make everything taste good!

Lunch was brought to work. I made a strawberry-feta-walnut salad with Annie’s lite raspberry vinaigrette and my last mushroom mozzarella boca burger on a Fiber One english muffin.

After work I came home to ride the stationary bike and my Dad made me dinner. This was what most of my meals growing up looked like. A veggie, a carb, and a protein.

We had broiled sole fish with frozen zucchini slices and a Near East mushroom brown rice pilaf. Poor Dad lost half my fish in the oven while turning them but I was almost glad because just half of it seemed like the perfect serving. Then I bit into it and it was so good I wish I had more.

Dessert was a special treat. I joined the Godiva rewards program since their store is right across from the one I work at.  I get to pick out a free chocolate every month :)

On another note, I just found out that my outlet mall just opened a Lululemon! Everyone just raves about their workout clothes so I can’t wait to stop by. And it’s an outlet nonetheless so hopefully there’s so good sales!

Not sure what’s in store for me today. I’m off and am feeling productive so we’ll see what happens. The only thing I absolutely want to do is get some strength training in since I haven’t done any since Thursday.

Wishful Thinking

My dinner party went great last night. Not only did I have everything on the table when they arrived, but the couscous was a hit :)

I had my Quorn “chicken” cutlet, which didn’t taste at all like chicken to me. And I was a bit turned off when I opened the cardboard Quorn box and the “chicken” cutlets were just in there unwrapped. I know it’s more environmentally friendly with no excess packaging but it just seemed weirdly unsanitary to me. My plate and a side salad:

For dessert, I decided to finally make Angela’s raw cookies. I mean, I had bought coconut oil just for these! Although if you don’t want to shell out the money, I think any kind of oil would work.

I had been putting off making these because I thought it’d be a pain but it was so ridiculously easy! The cashews and oats grinded in a minute in my mini food processor and then all you do is mix in the other 3 ingredients and you’re done! I added carob chips to mine and rolled the dough out. I couldn’t find any cute cookie cutters around so I just made circles.

These things were so good! I definitely want to experiment with some other nuts too because I’m not too big of a cashew fan. I think using peanuts would be delicious. I had 3 of them then called it a night.

My favorite cereal (Barbara’s Shredded Oats) was on sale again this week so it was an easy choice for breakfast this morning. I added in a nectarine, sunflower seed butter, and almond milk with a multivitamin on the side.

I did 45 minutes on the stationary bike before breakfast when I woke up. I just heard that we’re getting a Planet Fitness in my town, which is this really cheap gym that prides itself on being a judgement free zone. It’s like 2 minutes from Mark’s house (I can actually run there!) so I’m thinking of joining up.

I don’t really need a gym membership right now but it’s only like $20 a month and it might be just what I need to get out of my fitness slump. Working out at home is great but I don’t get to wear any of my cute fitness clothes. It sounds vain but I get excited to wear cute outfits! It could be just the motivation I need. Do you like wearing cute workout clothes or are you a tshirt and shorts kinda person? I don’t wear like matching stuff or anything but I definitely like my tight fitting tank tops. If you work hard for your body you deserve to show it off!

Anyways, I’m getting ahead of myself because the gym won’t be here for 3 months or so (I’m guessing they’ll wait to get all the New Year resolutioners in January) but I’ve been willing it to come to this empty space we’ve had in town for months now after Kmart shut down and I’m just surprised it actually is! I’m either really lucky or magical. Now if only we can get a Whole Foods in the old Linen’s and Things building…
