Give it a Chance

Happy Friday!

I have lots of good things planned:

  • Friday Morning French Toast breakfast with Dad
  • A longgg workout
  • A walk with Zoe in the cold
  • Booking my vacation (!)
  • Pizza night

I’m really looking forward to that workout so I’m gunna make this quick!

Breakfast yesterday was had in a mad rush but I happened to throw together something delicious.

Arnold multigrain sandwich thin topped with organic cheddar cheese slices, diced apples, walnuts, and flax (toasted of course).

I worked all day so I had to bring lunch. The Campbell Select Harvest soup really surprised me. I tried this brand when it first came out and found it really unflavorful. This one, on the other hand, was really good and full of flavor! I  guess it’s good to give things more than once chance sometimes.

Since I had Southwest soup, I brought my Spicy Southwestern Sunland peanut butter to make a sandwich with. I assumed it would taste just like Peanut butter & Co’s The Heat is On pb but, as usual, I assumed wrong. This one was just as spicy, but with a strong hint of lime to bring out the Southwestern-ness. It was also crunchy, which was a nice change for me!

I came home for dinner and Mom was making fried rice. What I think was in it: egg, peas, soy sauce, brown rice, and shrimp.

Ok, French Toast time now so I can start my day.

Question: Do you have plans this weekend? I’m working all day tomorrow but am having a big family dinner on Sunday where I’ll get to see my almost one year old niece so that’s what I’m looking forward to :)

A CookFree Weekend

Happy Monday! Hope you all had a great weekend. I didn’t have the greatest weekend but I had some great workouts. Wii Active is still kicking my butt! I’m halfway through the 30 day challenge.

Saturday I attempted to broaden my horizons and finally go to a real yoga class (it was free yoga day after all). I drove 20 minutes to get to the studio and then it was all metered parking and I had no quarters. By the time I found a free spot it was past 10:30 and I definitely wasn’t walking into my first yoga class late! The place looked really nice though so I think I might just suck it up and pay for a class some time.

It’s seriously so windy outside right now I feel like a tree is going to fall through my roof and right on top of me so I’m gunna try to make this quick!

I usually like the foodie part of weekends because it gives me time to cook for my parents. This weekend however, I did no cooking at all!

Friday night pizza was enacted as usual. This time we tried a cheeseless pie (not because we don’t love cheese, just because we ran out of it :( ) . I was skeptical because we didn’t have that many veggies to go on top – roasted red peppers, artichoke hearts, and frozen zucchini slices. It still turned out really good. I think I just like tomato sauce with pizza dough. SO good!

Saturday morning I was rushing to get to the (failed attempt at) yoga class so I made a quick breakfast, which also happens to be my favorite – ww English muffin with peanut butter, banana, cinnamon, and flax.

My Mom has been pestering me to make peanut noodles for some time now so I heated up some of my Sunland Thai Ginger peanut butter, soy sauce, and rice vinegar to make a peanut sauce and put it over already cooked noodles we had leftover. This doesn’t count as cooking by the way, it took like 5 minutes! I added some zucchini slices to get a veggie in.

I had pizza again Saturday night because Mark’s parents ordered it. Oh well, I guess cheese got the best of me that time.

Sunday morning’s breakfast was an egg beaters scramble, complete with potato, sweet potato, onions, and cherry tomatoes, made by Dad Butter.

And then was a wonderful surprise. The parents went down to visit their parents on Saturday and brought back PUMPKIN RAVIOLI. This was probably the highlight of my weekend :)

We served it with a sage browned butter sauce and topped it with walnuts. I think I ended up eating more than my share. But hey, I get pumpkin ravioli twice a year!

Now I’m off to do some cardio, possibly some Wii Active, and maybe some job searching before work. Hope you’re having a great start to the week!

Question: Do you like cooking or being cooked for? I usually like cooking myself, but every once in a while it’s nice to be cooked for.

PB in the Morning, PB in the Evening..

A while ago I went crazy on my peanut butter collection, going through jar upon jar each week. Naturally, I had to take a break from it. A break from peanut butter. It was horrible! Anyways, I’m uber excited that my peanut butter cravings are back, especially since I have all of these to go through still :)

Yesterday I had peanut butter with every meal. Probably not the healthiest choice but it sure was an easy way to get some protein!

Breakfast was steel cut oats, mixed with an overripe banana, and topped with chia seeds, sweetened coconut, currants, and Sunland currant-cinnamon pb.

Lunch was a good ol’ peanut butter and jelly sandwich, with flax and a side of apple slices with freshly ground cinnamon.

Truthfully, I’ve never liked peanut butter and jelly sandwiches. I was plagued in elementary school when my Mom would pack them in my lunch and the jelly would make the bread all soggy and gross. I shudder just thinking about it! Since then I always try to like the sandwich, but each time I make it I’m disappointed. I’ll just stick to fluffanutter sandwiches from now on..

Dinner was a tough one because there’s basically no food in my house right now. I made Lundberg’s butternut squash risotto and nuked some giant sweet potatoes in the microwave, which I topped with PB&Co cinnamon raisin swirl peanut butter. Sweet potatoes and peanut butter is like the best thing ever :)

My plan for today is to do some blog reading, go workout, and then head over to the boyfriends to have him keep me company while I apply to jobs. Hmm, my days are sounding awfully similar! Maybe something unplanned and exciting will happen today that I can tell you about. You never know!
